Ingredients
 

  • For the Chicken:
  • 2 lbs boneless, skinless chicken breasts
  • 1 ⅓ tablespoons olive oil
  • salt and black pepper, to taste
  • For the Sun-Dried Tomato Cream Sauce:
  • 1 cup chicken broth
  • 2/3 cup heavy cream , at room temperature
  • 1/4 cup fresh grated parmesan cheese, at room temperature
  • 2 teaspoons minced garlic
  • ⅔ cup sun-dried tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes

Instructions
 

  • Preheat your oven to 375 degrees and place the skillet in the center.
  • Season chicken with salt and pepper, then sear in an oiled skillet on medium high heat until golden, about 3-4 minutes and set aside.

    Not enough sauce it would have been good but 2 lb of chicken with barely any sauce was not the best… I was disappointed….

    What do you mean by preheat oven and place skillet in middle. Are we preheating a different skillet to transfer to once the stove top cooking is complete? Thanks!

      Hey there! So for this recipe I use a oven safe skillet, it can be a cast iron, a HexClad etc. You don’t need to transfer the chicken and sauce to a different skillet as long as the one you’re using on the stovetop is oven safe.
