Honey Mustard Herb Chicken

This Honey Mustard Herb Chicken is one of those easy chicken dinners that gives you a whole lot of flavor without a whole lot of work. Juicy bone-in chicken thighs are coated in a sweet and tangy homemade honey mustard sauce flavored with garlic, thyme, and rosemary, then baked until tender with beautifully golden skin.

And the prep couldn’t be much easier.

Mix the honey mustard sauce in a small bowl, spoon it over the chicken, and let the oven do the rest.

That’s my kind of weeknight dinner.

The combination of honey and Dijon mustard gives you the perfect balance between sweet and tangy, while rosemary, thyme, and garlic make the chicken taste like you put far more effort into it than you actually did.

Serve these honey mustard chicken thighs with roasted potatoes, sweet potatoes, green beans, rice, or your favorite vegetables for a simple complete meal the whole family can enjoy.

Why You’ll Love This Honey Mustard Chicken Recipe

This is exactly the kind of chicken dinner I love keeping in my back pocket for busy weeknights.

  • Simple ingredients
  • Minimal prep
  • No complicated marinade
  • Juicy bone-in chicken thighs
  • Sweet and tangy honey mustard sauce
  • Garlic and herbs in every bite
  • Mostly hands-off cooking
  • Easy enough for a weeknight
  • Great for meal prep
  • Delicious leftovers
  • Easy to pair with vegetables, potatoes, or rice

You don’t even need to sear the chicken in a large skillet first.

Everything goes straight into a baking dish and into the oven.

What Does Honey Mustard Herb Chicken Taste Like?

The sauce hits that sweet spot between sweet, savory, tangy, and herby.

Honey gives the chicken sweetness and helps the exterior caramelize.

Dijon mustard provides tang and a little sharpness to balance the honey.

Garlic adds savory flavor, while thyme and rosemary give the chicken that cozy herb-roasted flavor.

And because we’re using skin-on, bone-in chicken thighs, the dark meat stays wonderfully juicy as it cooks.

It’s a simple combination, but it works.

Ingredients You’ll Need

Bone-In Chicken Thighs

You’ll need 8 bone-in chicken thighs.

Bone-in chicken thighs are one of my favorite cuts for oven-baked chicken because they’re flavorful, forgiving, and less likely to dry out than white meat.

If your thighs are skin-on, even better.

That chicken skin can become beautifully golden, especially when you finish it briefly underneath the broiler.

Honey

You’ll need ¼ cup honey.

Honey gives our honey mustard sauce its sweetness and helps balance the acidity and sharpness of the mustard.

It also contributes to the caramelization on top of the chicken.

Keep an eye on the chicken if you use the broiler at the end because honey can go from beautifully caramelized to burned pretty quickly.

Dijon Mustard

You’ll need ¼ cup Dijon mustard.

Dijon is my preferred mustard for this recipe because it has a sharper, more complex flavor than basic yellow mustard.

Combined with an equal amount of honey, it creates an easy homemade honey mustard sauce that’s sweet without being overly sugary.

Olive Oil

You’ll need 2 tablespoons olive oil.

The olive oil helps the honey mustard mixture coat the chicken and adds richness.

Minced Garlic

One teaspoon minced garlic adds savory flavor to the sauce.

Garlic, rosemary, thyme, honey, and Dijon are such a good combination with chicken.

Thyme

You’ll need 1 teaspoon thyme.

Thyme has an earthy flavor that pairs beautifully with chicken and mustard.

Rosemary

You’ll need ½ teaspoon rosemary.

Rosemary has a stronger flavor than thyme, so we don’t need as much.

Kosher Salt

½ teaspoon kosher salt seasons the chicken and helps bring all the other flavors together.

Black Pepper

You’ll need ¼ teaspoon black pepper.

How to Make Honey Mustard Herb Chicken

This recipe really is as easy as mix, coat, and bake.

Step 1: Preheat the Oven

Preheat your oven to 350°F.

Arrange the chicken thighs in a baking dish in a single layer.

Don’t stack the chicken pieces on top of each other.

Giving them a little room helps them cook more evenly.

Step 2: Pat the Chicken Dry

Use paper towels to thoroughly pat the chicken dry.

This may seem like an insignificant step, but it matters—especially if you’re using skin-on chicken thighs.

Removing excess surface moisture helps the chicken skin brown rather than steam.

Just remember to immediately discard paper towels that have touched raw chicken and wash your hands and any contaminated surfaces thoroughly.

Step 3: Make the Honey Mustard Sauce

In a small bowl, combine:

  • ¼ cup honey
  • ¼ cup Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1 teaspoon thyme
  • ½ teaspoon rosemary
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Stir until the honey mustard sauce is smooth and completely combined.

That’s it.

No saucepan.

No cooking.

No complicated honey mustard marinade.

Do I Need to Marinate the Chicken?

No.

One of the reasons this is such a good recipe for busy weeknights is that you don’t have to wait around for the chicken to marinate.

The honey mustard mixture is flavorful enough to spoon directly over the chicken before it goes into the oven.

If you’re planning ahead, you could coat the chicken and refrigerate it for a short period before cooking, but it isn’t necessary to get a delicious meal.

Step 4: Coat the Chicken

Generously brush or spoon the honey mustard mixture over the top of the chicken.

Make sure each chicken thigh gets a good coating.

If you’re working with skin-on chicken thighs, concentrate plenty of sauce over the top of the chicken skin.

Important: Once a brush or spoon has touched raw chicken, don’t dip it into sauce that you plan to serve separately as a dipping sauce.

If you’d like extra clean honey mustard sauce for serving, make a separate batch that never comes into contact with raw chicken.

Step 5: Bake the Chicken

Place the baking dish into your preheated oven.

Bake for approximately 40–45 minutes, or until the chicken is fully cooked.

Cooking time can vary depending on the size and thickness of your chicken thighs, so don’t rely only on the clock.

The safest and most accurate way to know when chicken is done is to check its internal temperature.

What Temperature Should Chicken Thighs Be Cooked To?

Chicken should reach a safe minimum internal temperature of 165°F.

Use an instant-read thermometer and insert it into the thickest part of the chicken thigh without touching the bone.

Once it reaches at least 165°F, it’s safely cooked.

Chicken thighs can remain juicy beyond that temperature because dark meat contains more connective tissue and fat than chicken breast, but 165°F is the minimum food-safe temperature to look for.

Step 6: Broil for Crispier Skin

If you want crispier skin, turn on your oven’s top broiler during the final 2–3 minutes.

Watch the chicken closely.

Don’t walk away.

Honey contains natural sugar, which means the sauce can brown very quickly under high heat.

You want golden brown, caramelized chicken skin—not burned honey.

Remove the chicken as soon as the top reaches the color you want.

How Do I Get Crispy Chicken Skin?

There are a few things that help.

Pat the Chicken Dry

Surface moisture works against browning.

Dry chicken skin browns better than wet chicken skin.

Don’t Crowd the Pan

Arrange the chicken pieces in a single layer.

Use the Broiler

The honey mustard sauce keeps the surface moist during baking, so those last couple of minutes under the broiler can make a big difference.

Watch It Closely

Because there’s honey in the sauce, browning can happen quickly.

Stay near the oven.

Why Use Bone-In Chicken Thighs?

Bone-in chicken thighs are particularly good for oven roasting because they stay juicy.

Dark meat naturally contains more fat than chicken breasts, which gives you a little more flexibility with cooking time.

Chicken thighs also have plenty of flavor on their own, making them a great match for bold sauces like honey mustard.

And if you use skin-on chicken thighs, you get that extra layer of golden, savory goodness on top.

Can I Use Boneless Chicken Thighs?

Yes, but they’ll cook faster.

Boneless thighs are generally thinner than bone-in chicken thighs, so don’t use the 40–45 minute cooking time as an absolute rule.

Start checking them earlier with your instant-read thermometer.

Once the thickest portion reaches at least 165°F, they’re done.

Can I Use Skinless Chicken Thighs?

Yes.

The recipe will still work, but you obviously won’t get crispy chicken skin.

Skinless chicken thighs will still give you juicy dark meat coated in that sweet and tangy honey mustard sauce.

Keep an eye on the cooking time because size and thickness will affect how quickly they cook.

Can I Use Skinless Chicken Breasts?

You can adapt the honey mustard sauce for chicken breasts, but the cooking time will be different.

Chicken breasts—especially boneless, skinless chicken breasts—can dry out much more easily than thighs.

I wouldn’t bake them for 40–45 minutes automatically.

Instead, bake according to their thickness and begin checking the internal temperature earlier.

Remove them once the thickest portion reaches 165°F.

Can I Make Honey Mustard Chicken Tenders?

Yes.

The sauce itself works with chicken tenders too.

Again, the important difference is cooking time.

Chicken tenders are much smaller and thinner than bone-in chicken thighs, so they will cook considerably faster.

Always use internal temperature rather than trying to apply the thigh cooking time to a different cut of chicken.

Why Dijon Mustard?

Dijon mustard has more complexity than basic yellow mustard.

It brings acidity and sharpness that balances the sweetness of the honey.

That’s particularly important because without that contrast, honey-based sauces can become one-note and overly sweet.

Dijon gives this sauce some personality.

Can I Use Whole Grain Mustard?

You can replace part of the Dijon with whole grain mustard if you enjoy the texture of mustard seeds.

It’ll create a slightly different sauce with more texture and a stronger mustard presence.

For the smooth honey mustard sauce pictured in this recipe, I prefer Dijon.

Can I Use Yellow Mustard?

You can, but it will taste different.

Yellow mustard tends to have a brighter, more straightforward vinegar flavor.

Dijon gives the sauce a smoother, slightly more sophisticated flavor that works especially well with rosemary and thyme.

Is This a Honey Mustard Marinade?

Not exactly.

You certainly could use a similar mixture as a honey mustard chicken marinade, but this recipe doesn’t require marinating.

We’re using the honey mustard mixture as a sauce or glaze that’s applied immediately before baking.

That saves time and makes the recipe much easier for a weeknight chicken dinner.

Can I Use Fresh Herbs?

Absolutely.

Fresh herbs would be delicious here.

If you have fresh rosemary and thyme available, finely chop them before adding them to the sauce.

Because dried herbs are generally more concentrated than fresh herbs, you’ll typically need more fresh herbs than the amounts listed for dried.

Can I Add Cayenne Pepper?

If you like a little heat, yes.

A pinch of cayenne pepper can give the honey mustard sauce a sweet-and-spicy flavor.

Start with a small amount.

You can always add more next time, but you can’t take it back out.

Does Honey Mustard Sauce Need Apple Cider Vinegar?

Not in this recipe.

Some honey mustard recipes add apple cider vinegar for an additional touch of acidity.

Dijon mustard already brings plenty of tang here, so you don’t need another acidic ingredient.

Keeping the ingredient list simple is part of what makes this recipe so easy.

Do I Need Chicken Broth?

No.

There’s no chicken broth, chicken stock, heavy cream, white wine, or water required for this recipe.

The chicken releases some of its own juices as it cooks, and the honey mustard mixture provides plenty of flavor.

You don’t need to turn this into a complicated pan sauce.

Can I Cook This in a Skillet?

You could develop a skillet version of honey mustard chicken, but this recipe is specifically designed for a baking dish.

There’s no need to brown the chicken in a large skillet and then transfer it to the oven.

That means fewer dishes.

And I am always in favor of fewer dishes.

What to Serve With Honey Mustard Chicken

This chicken pairs with just about any simple vegetable, potato, or grain.

Some of my favorite choices include:

  • Roasted potatoes
  • Mashed potatoes
  • Sweet potatoes
  • Green beans
  • Broccoli
  • Roasted carrots
  • Brussels sprouts
  • Rice
  • Side salad
  • Dinner rolls

Because the honey mustard sauce has so much flavor, I usually keep the side dishes relatively simple.

Honey Mustard Chicken With Green Beans

Green beans are an especially good option for an easy weeknight dinner.

The fresh vegetable flavor balances the sweet honey mustard sauce without competing with it.

You can steam them, sauté them, or roast them separately while the chicken is in the oven.

Honey Mustard Chicken With Sweet Potatoes

Honey, mustard, rosemary, and sweet potatoes are a great combination.

Roasted sweet potatoes bring another touch of natural sweetness while the Dijon keeps the meal from becoming too sweet.

Add a green vegetable and you’ve got a simple complete meal.

Can I Turn This Into a Sheet Pan Dinner?

You can use the same flavor combination for a sheet pan meal, but you’ll need to think about the cooking times of whatever vegetables you’re adding.

Bone-in chicken thighs take considerably longer to cook than some vegetables.

If you’re adding something quick-cooking, it may need to go onto the sheet pan later.

Denser vegetables such as potatoes or sweet potatoes are better suited to longer roasting times, although the size of the pieces still matters.

Easy Honey Mustard Chicken for Busy Weeknights

This is exactly the type of recipe I want when I need dinner but don’t want to spend my entire evening cooking it.

Most of the prep happens in a few minutes.

Pat the chicken dry.

Mix the sauce.

Coat the chicken.

Bake.

While it’s in the oven, you’ve got plenty of time to make a side dish or clean up the kitchen.

And because you’re using one baking dish and one small bowl for the sauce, cleanup is pretty painless too.

Is Honey Mustard Chicken Good for Meal Prep?

Yes.

Chicken thighs reheat especially well because dark meat tends to stay juicy.

Pair a chicken thigh with vegetables, rice, or potatoes and portion everything into meal-prep containers.

Keep refrigerated until you’re ready to reheat.

How to Store Leftover Honey Mustard Chicken

Let leftover honey mustard chicken cool, then transfer it to an airtight container.

Refrigerate promptly and use within 3–4 days.

If you have juices or cooked sauce remaining in the baking dish, spoon a little over the chicken before storing it.

That can help keep the meat moist when reheated.

How to Reheat Honey Mustard Chicken

You can reheat individual portions in the microwave for convenience.

For multiple chicken thighs, I prefer gently reheating them in the oven.

Covering the chicken for most of the reheating time can help prevent it from drying out.

If you want to bring some crispness back to skin-on thighs, uncover them toward the end.

As with the initial cooking, be mindful that the honey coating can brown quickly.

Can I Freeze Leftover Honey Mustard Chicken?

Yes.

Let the cooked chicken cool completely before transferring it to a freezer-safe airtight container.

Freeze individual portions if you want an easy dinner you can pull out later.

Thaw frozen chicken safely in the refrigerator before reheating.

Can I Make the Honey Mustard Sauce Ahead?

Yes.

You can mix the honey, Dijon mustard, olive oil, garlic, rosemary, thyme, salt, and pepper ahead of time and keep it covered in the refrigerator.

Give it a good stir before using.

Just make sure sauce that’s been stored for later hasn’t previously come into contact with raw chicken.

Food Safety Tips for Working With Raw Chicken

A few simple habits make chicken preparation much safer.

Don’t rinse raw chicken. Rinsing can splash bacteria around your sink and surrounding surfaces.

Use separate utensils and a clean plate for cooked chicken rather than putting it back onto anything that held the raw chicken.

Discard paper towels that have touched raw chicken immediately.

Wash your hands with soap and water after handling raw chicken.

And most importantly, use an instant-read thermometer to verify the chicken has reached at least 165°F in the thickest portion.

And bone-in chicken thighs do what they do best: stay tender and juicy while everything bakes together.

The prep takes just a few minutes.

Pat the chicken dry, stir together the sauce, spoon it over the chicken, and put the baking dish in the oven.

Then give it a quick blast underneath the broiler at the end if you want that beautifully golden, slightly crispier skin.

Add potatoes, rice, green beans, or whatever vegetable your family likes and dinner is done.

It’s simple enough for busy weeknights but flavorful enough that it doesn’t feel like another boring chicken dinner.

Good evening. Your recipe looks great. I’m making it for dinner tonight but I have a question. I see that you add rosemary in the directions but I don’t see it in the ingredients list. How much rosemary do I need to use? Thank you

Hey there! Thank you for bringing this to my attention! Somehow the rosemary was left off of the ingredients list! It is suppose to be 1/2 teaspoon 🙂

It was delicious! The chicken came out perfect and it wasn’t too sweet. I paired it with broccoli, mashed potatoes and roasted carrots. Super easy to make for a family of 5.
