Garlic Parmesan Roasted Shrimp

Garlic Parmesan Roasted Shrimp
Garlic Parmesan Roasted Shrimp

This Garlic Parmesan Roasted Shrimp is one of the easiest dinners you can make when you need something on the table fast. Tender shrimp are tossed with olive oil, fresh garlic, Parmesan cheese, oregano, basil, salt, and black pepper, then roasted in the oven and finished with fresh lemon juice and parsley.

The whole thing takes just minutes to cook.

Seriously.

Once the shrimp are peeled and deveined, most of the work is already done. Arrange them on a baking sheet, add the seasonings and Parmesan, toss everything together, and roast for about 6–8 minutes.

That’s it.

You get juicy shrimp with plenty of savory garlic Parmesan flavor and a bright pop of fresh lemon without standing over a skillet.

Serve them with pasta, rice, vegetables, creamy polenta, or a big salad for an easy dinner. Or put them out with toothpicks and turn them into an easy appetizer.

This is exactly the kind of recipe I want in my back pocket for a busy evening.

Why You’ll Love This Garlic Parmesan Shrimp Recipe

Garlic Parmesan Roasted Shrimp
Garlic Parmesan Roasted Shrimp

This recipe checks a lot of boxes for me.

  • Ready incredibly fast
  • Made with a handful of simple ingredients
  • One baking sheet
  • Minimal cleanup
  • Plenty of fresh garlic
  • Freshly grated Parmesan cheese
  • Bright fresh lemon juice
  • Italian-inspired herbs
  • Naturally versatile
  • Easy enough for busy weeknights
  • Nice enough to serve to guests
  • Works as a main dish or appetizer

And because shrimp cook so quickly, this is one of those rare homemade dinners that can genuinely be faster than deciding what takeout everyone wants.

What Does Garlic Parmesan Roasted Shrimp Taste Like?

Garlic Parmesan Roasted Shrimp
Garlic Parmesan Roasted Shrimp

Think savory, garlicky, cheesy, buttery-tasting shrimp with a fresh burst of lemon.

The Parmesan brings salty, nutty flavor.

Fresh garlic gives the shrimp plenty of savory flavor, while dried oregano and basil bring in those familiar Italian-inspired notes.

Then the lemon juice goes on after roasting.

That little touch of acidity makes a big difference.

Instead of tasting heavy or overly cheesy, the finished shrimp taste bright and fresh.

Ingredients You’ll Need

One of the best things about this easy recipe is the short ingredient list.

Shrimp

You’ll need 1½ pounds medium shrimp, peeled and deveined.

Buying shrimp that’s already peeled and deveined is one of my favorite shortcuts for busy weeknights.

If you’re starting with frozen shrimp, that’s completely fine too.

Just thaw them thoroughly and pat them dry before cooking.

Freshly Grated Parmesan

You’ll need ⅓ cup freshly grated Parmesan cheese.

Freshly grated Parmesan gives you the best flavor and texture here.

I prefer buying a wedge and grating it myself rather than using the shelf-stable Parmesan from a shaker.

You don’t need a huge amount.

⅓ cup is enough to coat the shrimp with savory Parmesan flavor without completely burying them in cheese.

Fresh Lemon Juice

You’ll need ¼ cup lemon juice.

Fresh is definitely my preference.

The lemon gets stirred into the shrimp after roasting, so its bright flavor stays noticeable.

Olive Oil

You’ll need 3 tablespoons olive oil.

The olive oil coats the shrimp and helps the garlic, herbs, and Parmesan adhere to every piece.

Extra virgin olive oil works perfectly.

Minced Garlic

You’ll need 3 teaspoons minced garlic.

That’s approximately 1 tablespoon.

Fresh garlic is one of the main flavors in this dish, so this isn’t the place to be shy with it.

Fresh Parsley

You’ll need 2 tablespoons chopped fresh parsley for garnish.

Parsley adds freshness and a beautiful pop of green to the finished shrimp.

Dried Basil

One teaspoon dried basil adds another layer of Italian-inspired flavor.

Dried Oregano

You’ll also need 1 teaspoon dried oregano.

Oregano and basil are a classic combination with garlic, Parmesan, and lemon.

Salt and Black Pepper

Season with salt and freshly ground black pepper to taste.

Remember that Parmesan is naturally salty, so taste before getting too heavy-handed with additional salt.

How to Make Garlic Parmesan Roasted Shrimp

This really is one of the easiest shrimp recipes you can make.

Step 1: Preheat the Oven

Preheat your oven to 400°F.

Lightly grease a baking sheet or coat it with nonstick spray.

A rimmed baking sheet is particularly useful because shrimp release some liquid while roasting.

Step 2: Prepare the Shrimp

Make sure your shrimp are peeled and deveined.

Pat them thoroughly dry with paper towels.

You don’t need to rinse raw shrimp before cooking.

Getting rid of excess surface moisture helps the olive oil, garlic, herbs, and Parmesan stick to the shrimp instead of becoming watery on the baking sheet.

Step 3: Arrange the Shrimp

Place the shrimp onto your prepared baking sheet in a single layer.

This is important.

Don’t pile the shrimp on top of each other.

A single layer exposes the shrimp evenly to the heat and helps them roast rather than steam.

Step 4: Add the Garlic Parmesan Mixture

Drizzle the shrimp with 3 tablespoons olive oil.

Then add:

  • 3 teaspoons minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ⅓ cup freshly grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste

Gently toss everything directly on the baking sheet until the shrimp are evenly coated.

Then spread them back into a single layer.

That’s your prep done.

Step 5: Roast the Shrimp

Place the baking sheet into your preheated oven.

Roast at 400°F for approximately 6–8 minutes.

The exact cooking time depends on the size of the shrimp.

Smaller shrimp cook faster.

Larger shrimp may need another minute or two.

Watch the shrimp rather than relying entirely on the clock.

How Do You Know When Shrimp Are Done?

Garlic Parmesan Roasted Shrimp
Garlic Parmesan Roasted Shrimp

Shrimp cook incredibly quickly.

That’s great when you need dinner fast, but it also means there’s a small window between perfectly cooked shrimp and overcooked shrimp.

You’re looking for shrimp that are:

  • Pink on the outside
  • Opaque through the center
  • Firm but still tender
  • Curled into a loose C-shape

Don’t wait for them to become hard and tightly curled.

Overcooked shrimp can become rubbery very quickly.

Step 6: Add the Lemon Juice

Remove the baking sheet from the oven.

Pour ¼ cup fresh lemon juice over the hot shrimp.

Gently toss everything together.

Adding the lemon after roasting preserves more of its fresh, bright flavor.

It also combines with the olive oil, garlic, Parmesan, herbs, and juices from the shrimp to create a light coating around everything.

Step 7: Garnish and Serve

Sprinkle the shrimp with 2 tablespoons chopped fresh parsley.

Serve immediately.

Shrimp are at their absolute best when they’re hot and freshly cooked.

Why Roast Shrimp Instead of Cooking Them in a Skillet?

I love skillet shrimp, but roasting has some definite advantages.

First, it’s incredibly easy.

You don’t have to stand over a hot skillet flipping individual shrimp.

Second, you can spread all the shrimp across a large baking sheet and cook them at once.

That’s especially useful when you’re making 1½ pounds.

And finally?

Fewer things to babysit.

Put the pan into the oven, make your side dish, and check the shrimp in a few minutes.

For a busy weeknight, that’s a win.

Why Cook Shrimp in a Single Layer?

Shrimp release moisture while cooking.

If they’re piled together, that moisture gets trapped and the shrimp begin steaming.

A single layer allows the hot oven air to circulate around them more effectively.

It also helps them cook more evenly.

Use a large enough baking sheet that the shrimp have some room.

Do I Need to Use a Large Bowl?

No.

You can toss everything directly on the prepared baking sheet, which saves you from washing another bowl.

If you prefer a more even coating, however, you can combine the shrimp, olive oil, garlic, oregano, basil, Parmesan, salt, and black pepper in a large bowl first.

Then spread the seasoned shrimp onto your baking sheet.

Either method works.

Can I Use Large Shrimp?

Absolutely.

Large or jumbo shrimp work beautifully with this recipe.

Just remember that the size of the shrimp affects cooking time.

Medium shrimp may be finished around 6–8 minutes.

Larger shrimp can take a little longer.

Use appearance and doneness as your guide rather than blindly adding several minutes.

Can I Use Frozen Shrimp?

Yes.

I use frozen shrimp all the time.

In many parts of the country, the “fresh” shrimp sitting at the seafood counter was previously frozen anyway.

Thaw frozen shrimp completely before roasting.

The easiest method is to transfer them to the refrigerator ahead of time.

If you need them sooner, place the sealed shrimp or shrimp in an appropriate container in cold water until thawed.

Once thawed, drain and pat them very dry.

Don’t put icy or soaking-wet shrimp onto the baking sheet.

Do I Need to Rinse Shrimp?

No.

You don’t need to rinse raw shrimp before cooking.

Pat them dry with clean paper towels instead.

That minimizes splashing raw seafood juices around your sink and surrounding surfaces.

Can I Leave the Tails On?

Absolutely.

This is really personal preference.

Leaving the tails on can make the shrimp look especially nice if you’re serving them as an appetizer.

For a main dish that you’re mixing into pasta or serving over rice, removing the tails makes them easier to eat.

Fresh Garlic vs. Garlic Powder

For this recipe, I prefer fresh garlic.

We’re using a short cooking time, so the garlic stays noticeable and gives the shrimp plenty of fresh savory flavor.

Garlic powder can work in a pinch, but it won’t give you exactly the same result.

Can I Use Italian Seasoning?

Yes.

If you don’t have separate dried basil and oregano, Italian seasoning is an easy substitute.

Since Italian seasoning blends vary by brand, start with a modest amount and adjust according to taste.

The important thing is not to bury the shrimp underneath too many dried herbs.

Can I Use Fresh Basil?

You can.

Fresh basil has a different flavor and potency than dried basil.

If using fresh basil, I prefer adding it toward the end or using it as a garnish so its fresh flavor isn’t lost in the oven.

Why Use Freshly Grated Parmesan?

Freshly grated Parmesan melts and adheres better than many pre-grated options.

It also tastes better.

Since this is a garlic Parmesan shrimp recipe, the Parmesan isn’t a background ingredient.

You want to actually taste it.

Buy a wedge of good Parmesan and grate it right before using if you can.

Will the Parmesan Get Crispy?

Some Parmesan may lightly brown around the shrimp and baking sheet, but I wouldn’t keep cooking the shrimp just to get deeply golden cheese.

Shrimp cook much faster than Parmesan takes to develop a heavy crust.

The priority is juicy, tender shrimp.

If they’re cooked through at 6–8 minutes, take them out.

Don’t sacrifice perfectly cooked shrimp because you’re waiting for the cheese to become golden brown.

Can I Add Red Pepper Flakes?

Absolutely.

If you want a little heat, sprinkle red pepper flakes over the shrimp before roasting.

Start small.

Garlic, Parmesan, lemon, and red pepper flakes are a fantastic combination.

You can also put red pepper flakes on the table so everyone can control their own heat level.

Can I Add Lemon Zest?

Yes.

If you really love lemon, add a little fresh lemon zest along with the lemon juice.

Zest gives you concentrated citrus aroma without adding additional liquid.

I would zest the lemon before squeezing it.

Much easier.

Can I Add Cherry Tomatoes?

Absolutely.

Cherry tomatoes would turn this into an even more substantial sheet pan shrimp dinner.

Just keep in mind that tomatoes and shrimp don’t necessarily have identical cooking times.

You may want to give the tomatoes a head start in the oven before adding the shrimp.

That way the tomatoes have time to soften without forcing you to overcook the seafood.

Can I Add Broccoli?

Yes.

Broccoli florets are another great option if you want a more complete meal on one baking sheet.

Again, timing matters.

Raw broccoli usually needs longer in the oven than medium shrimp.

Roast the broccoli first, then add the shrimp toward the end.

That gives both ingredients the cooking time they actually need.

What to Serve With Garlic Parmesan Roasted Shrimp

One of the best things about this simple shrimp dish is how versatile it is.

You can serve it with:

  • Pasta
  • Rice
  • Creamy polenta
  • Mashed potatoes
  • Roasted potatoes
  • Garlic bread
  • Broccoli
  • Green beans
  • Asparagus
  • Roasted vegetables
  • A big salad

For a lighter dinner, I’d go with a big salad and some crusty bread.

For serious comfort food, give me pasta or creamy polenta.

Garlic Parmesan Shrimp With Pasta

This is probably one of the easiest ways to turn the shrimp into a more complete meal.

Cook your favorite pasta while the shrimp are roasting.

When the shrimp come out of the oven, toss them and all those garlicky lemon-Parmesan juices with the hot pasta.

You can add a little reserved pasta water or olive oil if you need more moisture.

Finish with additional Parmesan and parsley.

Dinner is done.

Garlic Parmesan Shrimp With Rice

Rice is another easy option because it absorbs all the flavorful juices from the shrimp.

White rice, brown rice, or even a simple rice pilaf works.

Spoon the shrimp and the liquid from the baking sheet over the rice rather than leaving those juices behind.

Garlic Parmesan Shrimp With Creamy Polenta

If you want something especially comforting, serve the roasted shrimp over creamy polenta.

The soft cornmeal underneath catches the lemony garlic juices and gives you a restaurant-style dinner without much additional work.

Turn It Into an Easy Appetizer

This recipe doesn’t have to be a main dish.

Garlic Parmesan roasted shrimp make an excellent party appetizer too.

Leave the tails on for easier handling and arrange the cooked shrimp on a serving platter.

Add fresh parsley and lemon wedges.

You could serve them with cocktail sauce, although personally I’d let the garlic Parmesan flavor shine.

Perfect for Busy Weeknights

There are nights when I enjoy spending time in the kitchen.

And then there are nights when I want dinner done immediately.

This recipe is for the second kind.

The shrimp only need about 6–8 minutes in the oven.

That means your side dish will probably take longer than the main course.

If you start rice, pasta, or vegetables first, you can put the shrimp into the oven during the final few minutes and have everything ready at approximately the same time.

Can I Prepare the Shrimp Ahead of Time?

You can peel and devein the shrimp ahead if needed.

You can also measure the herbs, grate the Parmesan, mince the garlic, and chop the parsley.

I wouldn’t let raw shrimp sit in lemon juice for an extended period.

The acidity begins changing the texture of seafood.

Since the lemon isn’t added until after roasting in this recipe anyway, there’s no reason to add it early.

How to Store Leftover Garlic Parmesan Shrimp

Let leftover shrimp cool, then transfer them to an airtight container.

Refrigerate promptly and enjoy within 2–3 days for the best quality.

Shrimp are much better freshly cooked, so I don’t intentionally make a huge amount of leftovers.

How to Reheat Shrimp Without Overcooking Them

Gently.

Shrimp that have already been cooked don’t need another full cooking session.

You’re just warming them.

The microwave works for convenience, but use short intervals.

You can also warm them briefly in a skillet over medium-low heat.

Stop as soon as they’re heated through.

The longer you cook them the second time, the more likely they are to become rubbery.

Can I Freeze Cooked Garlic Parmesan Shrimp?

You can freeze cooked shrimp, although the texture is usually best when they’re eaten fresh.

Cool them completely and place them in a freezer-safe airtight container.

Thaw in the refrigerator and reheat gently.

If you’re starting with frozen raw shrimp, check the packaging and handling instructions before refreezing after cooking.

Why Did My Shrimp Turn Rubbery?

They were probably overcooked.

This is by far one of the most common problems with shrimp.

They cook incredibly quickly.

At 400°F, medium shrimp don’t need much time.

Start checking at 6 minutes.

If they’re opaque, pink, and cooked through, take them out.

An extra five minutes might not sound like much when you’re roasting chicken or potatoes.

With shrimp, five minutes can be the difference between tender and rubbery.

Why Is There Liquid on My Baking Sheet?

Shrimp naturally release some moisture as they cook.

You may see even more if the shrimp were frozen and weren’t thoroughly dried after thawing.

Some liquid is completely normal.

And in this recipe, it isn’t necessarily a bad thing.

Those juices mix with olive oil, garlic, Parmesan, herbs, and lemon to create a flavorful liquid that you can spoon over rice, pasta, or polenta.

Why Didn’t My Shrimp Brown?

Remember, we’re roasting shrimp for only a few minutes.

The goal isn’t to deeply brown the outside.

We’re trying to cook the shrimp quickly while keeping them juicy and tender.

If you wait for medium shrimp to become deeply golden brown, you’ll probably overcook them.

Flavor matters more than color here.
