What Makes This Salisbury Steak So Good?

Salisbury Steak and Gravy
Salisbury Steak and Gravy

The secret is building flavor in every step.

The ground beef patties are seasoned with Dijon mustard, Worcestershire sauce, grated onion, and herbs before being seared to create flavorful browned bits in the skillet.

Those browned bits become the base for an incredibly rich mushroom gravy made with onions, mushrooms, butter, beef broth, and Better Than Bouillon. The patties finish cooking directly in the gravy, soaking up every bit of flavor while staying juicy and tender.

Unlike recipes that rely on cream of mushroom soup, this homemade gravy is rich, silky, and packed with savory flavor.

For the Salisbury Steaks

  • 1 pound 85/15 ground beef
  • ⅓ cup panko breadcrumbs

  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Why Panko Breadcrumbs?

Salisbury Steak and Gravy
Salisbury Steak and Gravy

Using panko breadcrumbs instead of plain bread crumbs keeps the Salisbury steak patties tender without making them dense.

Combined with the egg and grated onion, they help create juicy, flavorful hamburger steaks that hold together perfectly while cooking.

How to Make Salisbury Steak and Gravy

Step 1: Make the Patties

In a large bowl, combine:

  • Ground beef
  • Panko breadcrumbs
  • Large egg
  • Grated yellow onion
  • Ketchup
  • Dijon mustard
  • Worcestershire sauce
  • Garlic powder
  • Onion powder
  • Oregano
  • Salt
  • Black pepper

Mix just until combined.

Avoid overmixing, which can make the patties tough.

Shape the meat mixture into four oval patties.

Step 2: Brown the Patties

Heat the olive oil in a large skillet over medium-high heat.

Carefully place the patties into the hot skillet.

Cook for 3–4 minutes per side until browned.

The patties don’t need to be fully cooked yet.

Transfer them to a plate.

Step 3: Cook the Onions and Mushrooms

Reduce the heat to medium heat.

Melt the butter in the same skillet.

Add:

  • Sliced yellow onion
  • Fresh mushrooms

Cook for 8–10 minutes, stirring occasionally, until softened and lightly golden.

Stir in the garlic and cook for another 30 seconds.

The mushrooms and onions will soak up all the flavorful browned bits from the bottom of the pan.

Step 4: Make the Rich Brown Gravy

Sprinkle the flour over the onion and mushroom mixture.

Cook for one minute to eliminate the raw flour taste.

Slowly whisk in the beef broth.

Add:

  • Better Than Bouillon beef base
  • Worcestershire sauce

Continue simmering until the rich brown gravy thickens.

Taste and season with additional salt and black pepper if needed.

Step 5: Finish Cooking

Return the browned patties to the skillet along with any juices that collected on the plate.

Spoon the gravy over the tops.

Cover and simmer for 10–12 minutes, or until the patties reach an internal temperature of 160°F.

Sprinkle with fresh parsley before serving.

Tips for the Best Salisbury Steak

Don’t Overmix the Beef

Mix only until the ingredients come together to keep the patties tender.

Brown the Patties Well

A deep golden crust creates extra flavor for the gravy.

Cook the Flour

Allowing the flour to cook for a full minute removes any raw flour taste.

Simmer Gently

A gentle simmer keeps the patties moist while thickening the gravy perfectly.

Easy Variations

Customize this recipe by trying:

  • Ground turkey
  • Baby Bella mushrooms
  • White button mushrooms

Thaw overnight before reheating.

I made this recipe of Salisbury steak and it came out delicious! I doubled the recipe for my family “big eaters “ everyone loved it the only thing I would change is maybe do the 70/30 in fat ratio of ground beef otherwise it was delicious just the same ..
