Fluffy Cinnamon Delight: Easy Snickerdoodle Cupcakes Recipe

Easy Snickerdoodle Cupcakes
Easy Snickerdoodle Cupcakes

If you love the warm cinnamon-sugar flavor of a classic snickerdoodle cookie, these Easy Snickerdoodle Cupcakes turn all of that cinnamon sugar goodness into a soft, moist cupcake. Each cupcake has a layer of cinnamon sugar tucked inside the batter, another sprinkle over the top, and a fluffy cinnamon buttercream frosting to finish everything off.

What I love about this snickerdoodle cupcake recipe is that it doesn’t just taste like a vanilla cupcake with cinnamon frosting. The cinnamon-sugar mixture is layered right into the cupcake batter, giving you that familiar snickerdoodle flavor from the first bite to the last.

These are especially good during the fall and Christmas season, but cinnamon lovers definitely don’t need to wait for a certain time of the year to make them. They’re simple enough for everyday baking but pretty enough for birthdays, parties, holidays, and dessert tables.

Why You’ll Love These Snickerdoodle Cupcakes

Easy Snickerdoodle Cupcakes
Easy Snickerdoodle Cupcakes

These moist snickerdoodle cupcakes combine some of the best things about cupcakes and your favorite cookies in one dessert.

You’ll love them because:

  • They have cinnamon sugar both inside and on top of the cupcakes.
  • Sour cream keeps the crumb soft and moist.
  • Melted butter gives the cupcakes rich flavor without needing to cream butter.
  • The cinnamon buttercream frosting is light and fluffy.
  • You only need about 45 minutes before cooling and decorating.
  • They’re an easy recipe for beginning bakers.
  • They’re great for fall, birthdays, and the Christmas season.
  • The recipe makes a convenient batch of 12 cupcakes.

The end result is a soft, cinnamony cupcake topped with a generous swirl of buttery cinnamon frosting.

Ingredients You’ll Need

For the Cupcakes

  • 1⅔ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter
  • 1½ cups granulated sugar, divided
  • 1 large egg, at room temperature
  • ¼ cup sour cream, at room temperature
  • ¾ cup milk, at room temperature
  • 1 tablespoon pure vanilla extract
  • 2 teaspoons ground cinnamon

For the Cinnamon Buttercream Frosting

  • 1 cup butter, softened to room temperature
  • 3 cups confectioners’ sugar
  • ¼ cup heavy cream
  • 2 teaspoons pure vanilla extract
  • Salt, to taste
  • 1 tablespoon ground cinnamon

What Makes These Taste Like Snickerdoodles?

Easy Snickerdoodle Cupcakes
Easy Snickerdoodle Cupcakes

A traditional snickerdoodle is known for its cinnamon-sugar coating. Instead of simply adding ground cinnamon to a basic cupcake, this recipe creates actual layers of cinnamon sugar.

Each cupcake liner gets a layer of batter, a teaspoon of cinnamon sugar, another layer of batter, and another sprinkle of cinnamon sugar over the top of the cupcakes.

That method gives the finished cupcakes little ribbons and pockets of cinnamon-sugar flavor throughout.

The cinnamon buttercream frosting takes things one step further, so you get cinnamon in both the cake and frosting.

Why Sour Cream Makes Better Cupcakes

Sour cream is one of my favorite ingredients for creating moist cupcakes.

It adds fat and moisture to the batter without making it overly thin. Its slight tang also balances all that sugar and vanilla.

If you don’t have sour cream, plain Greek yogurt can usually work as a substitute. Use the same amount and choose a full-fat or whole-milk yogurt for the best texture.

Why Room Temperature Ingredients Matter

This recipe calls for the egg, sour cream, and milk to be at room temperature.

Room-temperature ingredients blend more easily into the melted butter and sugar mixture, helping create a smoother batter.

Cold ingredients can cause melted butter to firm up suddenly and may make the wet ingredients look uneven.

For the best results, set the ingredients on the counter before you begin baking.

How to Make Easy Snickerdoodle Cupcakes

Easy Snickerdoodle Cupcakes
Easy Snickerdoodle Cupcakes

Step 1: Heat the Oven and Prepare the Pan

Heat your oven to 350°F.

Line a standard 12-cup cupcake tin or muffin tin with cupcake liners.

Set the pan aside while you prepare the batter.

Step 2: Combine the Dry Ingredients

In a medium bowl, whisk together:

  • All-purpose flour
  • Baking powder
  • Baking soda
  • Salt

Set the flour mixture aside.

Whisking these dry ingredients separately helps distribute the leavening evenly so you don’t end up with pockets of baking powder or baking soda in the finished cupcakes.

Step 3: Melt the Butter

Place the butter in a large microwave-safe bowl and melt it.

Add 1 cup of granulated sugar and whisk until combined.

The mixture will look a little gritty rather than light and fluffy. That’s exactly what you want.

Allow the melted butter and sugar mixture to cool slightly before adding the egg.

Step 4: Add the Wet Ingredients

Once the butter mixture has cooled slightly, stir in:

  • Egg
  • Sour cream
  • Milk
  • Vanilla extract

Whisk until the wet ingredients are smooth and evenly combined.

The vanilla is important here because it gives the cupcakes a warm bakery-style flavor that works beautifully with cinnamon.

Step 5: Add the Flour Mixture

Gradually add the dry ingredients to the large bowl.

Mix only until the batter is thick and smooth.

Avoid overmixing. Once you don’t see streaks of dry flour, you’re done.

Overmixing can make cupcakes dense rather than soft and fluffy.

Step 6: Make the Cinnamon Sugar

In a small bowl, stir together the remaining ½ cup granulated sugar and 2 teaspoons ground cinnamon.

This is what creates the snickerdoodle-style layers inside each cupcake.

Step 7: Fill the Cupcake Liners

Spoon approximately 2 scant tablespoons of batter into each cupcake liner.

Sprinkle about 1 teaspoon of cinnamon sugar over that first layer.

Add another heaping tablespoon of batter over the cinnamon sugar, filling each liner about ¾ full.

It’s completely fine if some cinnamon sugar still shows through the top layer.

Step 8: Add More Cinnamon Sugar

Sprinkle another teaspoon of the cinnamon-sugar mixture over the top of each cupcake.

That extra layer gives these cinnamon cupcakes even more of that classic cookie flavor.

Step 9: Bake

Bake for approximately 19–21 minutes.

The cupcakes are done when a toothpick inserted into the center comes out clean or with a few moist crumbs attached.

Avoid baking them longer than necessary.

Overbaking is one of the easiest ways to turn a moist cupcake into a dry one.

Step 10: Cool Completely

Let the cupcakes cool briefly in the pan, then transfer them to a wire rack.

They need to cool completely before you add the frosting.

If the cupcakes are even slightly warm, the buttercream can soften or melt.

How to Make Cinnamon Buttercream Frosting

Once the cupcakes have cooled, it’s time for the cinnamon frosting.

Step 1: Beat the Butter

Place the softened butter in the bowl of a stand mixer or a large mixing bowl.

Using an electric mixer fitted with a paddle attachment or whisk attachment, beat the butter on high speed for about 1 minute.

The butter should look smooth and creamy.

Step 2: Add Powdered Sugar and Flavorings

Add:

  • Confectioners’ sugar
  • Heavy cream
  • Ground cinnamon
  • Vanilla extract

Begin mixing on low speed for about 30 seconds so powdered sugar doesn’t fly everywhere.

Then increase to high speed and beat for approximately 3 minutes.

The frosting should become noticeably lighter and fluffier.

Step 3: Adjust the Consistency

If the buttercream is too thin, add a little more powdered sugar.

If it’s too thick, add a small splash of heavy cream.

Taste it.

If the frosting seems overly sweet, add a pinch of salt. About ¼ teaspoon is usually plenty.

How to Frost Snickerdoodle Cupcakes

Once your cupcakes are completely cool, transfer the cinnamon buttercream to a piping bag.

A large star tip works especially well for a classic bakery-style swirl.

Pipe the frosting over the top of the cupcakes, beginning around the outer edge and working upward toward the center.

For an extra cinnamon-sugar finish, sprinkle just a little cinnamon sugar over the frosting.

You could even add mini snickerdoodle cookies on top if you’re making these for a party.

Cinnamon Buttercream vs. Cinnamon Cream Cheese Frosting

Easy Snickerdoodle Cupcakes
Easy Snickerdoodle Cupcakes

This recipe uses cinnamon buttercream frosting, which is made with butter, powdered sugar, cream, cinnamon, and vanilla.

It’s sweet, fluffy, and sturdy enough to pipe beautifully.

If you prefer a tangier frosting, you could make a cinnamon cream cheese frosting instead.

Cream cheese frosting will be softer than buttercream, but its slight tang works especially well with the sweet cinnamon cupcakes.

Tips for the Best Snickerdoodle Cupcakes

Use Room Temperature Ingredients

This helps everything blend into a smooth batter.

Don’t Overmix

Once your flour mixture disappears into the wet ingredients, stop mixing.

Measure Flour Correctly

Spoon the all-purpose flour into your measuring cup and level it rather than scooping directly from the bag.

Too much flour can create dry cupcakes.

Don’t Overfill the Cups

Fill the muffin cups about ¾ full.

Use an Oven Thermometer

If your cupcakes frequently bake too quickly or too slowly, an oven thermometer can help confirm whether your oven temperature is accurate.

Cool Completely Before Frosting

Warm cupcakes and buttercream do not mix.

Can I Use Whole Milk?

Yes.

Whole milk is an excellent choice because its fat content contributes to a softer crumb and richer flavor.

Two-percent milk will also work, but whole milk gives you the best flavor and texture.

Can I Use Unsalted Butter?

Yes.

Unsalted butter works well in both the cupcakes and frosting.

If using salted butter in the frosting, taste before adding additional salt.

Can I Substitute Greek Yogurt for Sour Cream?

Yes.

Plain Greek yogurt is one of the easiest substitutions for sour cream.

Use ¼ cup Greek yogurt in place of the sour cream.

Avoid flavored yogurt because it can change the sweetness and flavor of the cupcakes.

Do I Need Cake Flour?

No.

Regular all-purpose flour works perfectly here.

Cake flour would produce a slightly softer crumb, but this recipe was designed around all-purpose flour, so there’s no need to make a substitution.

Can I Use Vegetable Oil Instead of Butter?

You could experiment with it, but the cupcakes won’t have quite the same buttery flavor.

The melted butter is part of what gives these cupcakes such a rich flavor while still keeping the preparation easy.

For the best flavor, I recommend making the recipe as written.

Snickerdoodle Cupcake Variations

Cinnamon Cream Cheese Snickerdoodle Cupcakes

Replace the buttercream with cinnamon cream cheese frosting.

Brown Sugar Snickerdoodle Cupcakes

Replace a small portion of the granulated sugar in the batter with brown sugar for a slightly deeper flavor.

Mini Snickerdoodle Cupcakes

Bake the batter in mini muffin cups for bite-sized cupcakes.

You’ll need to reduce the baking time substantially, so begin checking them early.

Snickerdoodle Cookie Cupcakes

Top each frosted cupcake with a small snickerdoodle cookie.

Extra-Cinnamon Cupcakes

For serious cinnamon lovers, add a light sprinkle of cinnamon sugar over the finished buttercream.

Can I Make These Into a Snickerdoodle Cake?

You can use the same flavor inspiration for a snickerdoodle cake, although this exact recipe is specifically designed for cupcake form.

A cake would require adjustments to baking time and potentially pan size.

For the most reliable end result, I recommend keeping this recipe as cupcakes.

Can I Make Them Ahead of Time?

Yes.

The unfrosted cupcakes can be made a day ahead.

Once completely cool, store them in an airtight container at room temperature.

You can make the frosting separately and refrigerate it.

Before decorating, let the frosting come closer to room temperature and beat it briefly with your hand mixer or stand mixer until fluffy again.

How to Store Snickerdoodle Cupcakes

Store frosted cupcakes in an airtight container.

Because this frosting is butter-based rather than cream cheese-based, the cupcakes can generally stay at cool room temperature for a short period.

For longer storage, refrigerate them.

Bring refrigerated cupcakes closer to room temperature before serving so the buttercream softens and the cake has its best texture.

Can You Freeze Snickerdoodle Cupcakes?

Yes.

I recommend freezing the cupcakes without frosting.

Let them cool completely, then wrap them individually with plastic wrap and place them in a freezer-safe container.

Freeze for up to about 2–3 months.

Thaw at room temperature before frosting.

Buttercream can also be frozen separately and re-whipped after thawing.

How Do I Keep Cupcakes Moist?

The sour cream, milk, egg, and melted butter already help make these moist cupcakes, but storage matters too.

Once they’re completely cool, don’t leave them exposed to air for hours.

Transfer them to an airtight container as soon as possible.

Also avoid refrigerating unfrosted cupcakes unnecessarily, since refrigerators can dry out cake.

Can I Make These at High Altitude?

If you bake at high altitude, cupcakes can rise and fall differently because of lower air pressure.

Depending on your elevation, you may need to slightly reduce sugar or leavening, add a small amount of additional liquid, or increase the oven temperature.

Because high-altitude adjustments depend heavily on elevation, use the recipe as written unless you normally adjust cake recipes where you live.

What to Serve With Snickerdoodle Cupcakes

These cupcakes are great on their own, but they work especially well on a dessert table alongside:

  • Snickerdoodle cookies
  • Sugar cookies
  • Cinnamon rolls
  • Vanilla cupcakes
  • Chocolate cake
  • Coffee cake
  • Apple desserts
  • Pumpkin desserts

They’re particularly fun for the Christmas season when cinnamon desserts feel right at home.

Frequently Asked Questions

What do snickerdoodle cupcakes taste like?

They taste like a soft vanilla-cinnamon cupcake with layers of cinnamon sugar and a sweet cinnamon buttercream frosting.

Why are my cupcakes dry?

The most common causes are too much flour or too much baking time. Measure flour carefully and begin checking at 19 minutes.

Why did my cupcakes sink?

Cupcakes can sink if they’re underbaked, if the oven door is opened too early, or if too much leavening is used.

Can I make the frosting less sweet?

Yes. Add a pinch of salt and, if necessary, slightly reduce the powdered sugar while maintaining a pipeable consistency.

Do these contain cream of tartar?

No. Traditional snickerdoodle cookies often contain cream of tartar, but this cupcake recipe gets its lift from baking powder and baking soda.

Can I use cinnamon cream cheese frosting instead?

Absolutely. It would be delicious with these cupcakes.

How full should I fill the cupcake liners?

About ¾ full after both batter layers and the cinnamon-sugar filling are added.

Can I make mini cupcakes?

Yes. Use a mini cupcake tin and begin checking them much sooner than the regular cupcakes.

Do I need a stand mixer?

No. A hand mixer works perfectly for the frosting.

Can I frost them the night before?

Yes. Store the frosted cupcakes covered so they don’t dry out.

Final Thoughts

These Easy Snickerdoodle Cupcakes take everything I love about a classic snickerdoodle and turn it into a soft, fluffy cupcake.

The vanilla cupcake batter is layered with cinnamon sugar, the tops get another sprinkle before baking, and the finished cupcakes are crowned with a fluffy cinnamon buttercream frosting. You get cinnamon sugar goodness in every bite without needing complicated ingredients or techniques.

Hi I’m not sure what you mean by yogurt added in. The recipe doesn’t call for yogurt maybe I’m confused. Thank you

I believe she was talking about the sour cream. Usually the two can be substituted for each other and she doesn’t mention the sour cream anywhere else in the recipe.
