Ingredients Overview
Alright, let's dive into the magic behind these perfect peach muffins and their irresistible crumb topping. First things first, for that scrumptious topping, you'll need a mix of all-purpose flour, granulated sugar, brown sugar for that extra depth of sweetness, and a dash of cinnamon to spice things up. Oh, and let's not forget the butter—melted, to bring it all together into those delightfully crunchy crumbs that we all love so much.
Moving on to the muffins themselves, the base begins with our trusty friend all-purpose flour again, combined with baking powder to ensure they rise into the fluffy treats we're aiming for. To balance the scales, a pinch of salt is added. The wet ingredients wave starts with eggs and granulated sugar, followed closely by a dollop of sour cream for moistness, vegetable oil for a tender crumb, and a whisper of vanilla extract for that aromatic charm. But the true star of the show? Ripe, juicy peaches, meticulously chopped and folded in, promising a burst of summer in every bite. Whether you're indulging in a peachy breakfast or seeking that perfect peach dessert, these muffins are here to make every moment a bit sweeter.
Preparing the Crumb Topping
Oh, let me tell you about the magic of making the crumb topping for those utterly delightful peach muffins. It's like the fairy dust that transforms a good muffin into a great one. I start by grabbing a bowl and whisk together our all-purpose flour, brown sugar, granulated sugar, and a touch of cinnamon. This mix is where the journey to that perfect crumbly texture begins. Then, the real trick – adding melted butter. It's kind of amazing how these simple ingredients mingle together to form those delicious little crumbs that we all love. But here's a tip I learned the hard way – pop this mixture into the fridge while you're mixing up your muffin batter. It gives the topping a chance to firm up just a bit, making it easier to sprinkle over your batter later. Trust me, it's a small step that makes a big difference.
Combining Dry Ingredients
Especially something as delightful as peach muffins, starting with the right foundation is everything. That's why combining the dry ingredients is not just a step but a gateway to ensuring those muffins turn out perfectly. For our peach muffin recipe, you'll need all-purpose flour, baking powder, and a pinch of salt. The all-purpose flour acts as the sturdy base, giving structure to our muffins, while the magical baking powder is our rising star, ensuring our muffins puff up, looking as gorgeous as they taste.
And let's not forget a little dash of salt, which might seem minor but is essential for balancing the flavors. Now, grabbing a whisk and mixing these dry ingredients might seem simple, but it's a crucial step that promises even distribution, guaranteeing each muffin bakes uniformly. So, let's whisk away, creating a perfect canvas for our juicy peach chunks and that irresistible crumb topping to come together.
Mixing Wet Ingredients
Hey there, fellow baker! Let me share a little secret with you on how to get those wet ingredients just right for our peach muffins. First off, grab your eggs and sugar. You're going to whisk these buddies until they're pale and perfectly combined. It’s like watching magic happen right before your eyes. But the real game changer? That's sour cream, my friends. Not only does it add a delightful moisture to our muffins, making them oh-so-tender, but it also brings a subtle tang that balances the sweetness. And let’s not forget a splash of vegetable oil and a dash of vanilla extract. These two are the unsung heroes that contribute immensely to the flavor and texture, making each bite a reminder of why we love to bake. Trust me, these little moves will elevate your muffin game to pro levels!
Folding in the Peaches
Now, this is the part where we make those peach muffins truly irresistible. Take your peach chunks - yes, those juicy symbols of summer - and give them a gentle toss in a tablespoon of all-purpose flour. This little trick? It's what keeps them from taking a dive to the bottom of your muffins.
After that, let's get to folding them into the batter. Here we're embodying the essence of patience, folding them in carefully to ensure these delightful peach pieces are spread out evenly. Why? Because every bite should be a perfect blend of moist muffin and sweet, tangy peach.
Oh, and remember to save a handful of those peach chunks. We're going to sprinkle these on top for a pretty finish and that burst of fresh peach flavor right when you take your first bite. Trust me, it's a game-changer for your peach muffins.
Baking the Perfect Muffins
Once you've got your batter mixed and crumb topping chilled, it's time to bring these peach muffins to life. First, scoop the batter into your muffin tins lined with paper liners, filling them about ⅔ full. This is where the magic starts. You see, getting the batter just right in the tin is your first step towards muffin perfection. Now, for my favorite part - sprinkling that delicious crumb topping over each muffin. It's all about the crumb, folks!
Now, here's a little trick I learned along the way: start by baking these beauties at a high temperature of 400 degrees Fahrenheit for the first 5 minutes. This initial heat blast gives the muffins a quick lift, creating those gorgeous, bakery-style domed tops we all love. After those 5 minutes, don't even think about opening that oven door; just reduce the heat to 375 degrees Fahrenheit and let them bake for another 15 minutes. To make sure they're baked to perfection, do the toothpick test - stick it in the center and it should come out clean. If it does, congratulations, you've just baked the perfect peach muffins!

In the list of ingredients it says sour cream, but in the instructions it says yogurt. I used sour cream and I hope it works!

Yes! You can you can use plain yogurt or sour cream! I am a fan of sour cream but some like yogurt as well so I included both but must have missed adding that! Sorry about the confusion!

I just moved to Albuquerque from Rhode Island which is a mile high. For this recipe, I used gluten free flour. The crumb topping is wonderful but I cut in cold butter. For the batter, I used full fat sour cream, and added 1/2 tsp. Cinnamon, 1/4 tsp. Nutmeg and 1/4 c. GF flour. Had to add 10 minutes baking time for higher elevation. Delicious!!

Really good! I used Greek yogurt and came out nice. So yummy!
