Instructions
Adjust your oven racks, placing one at the very bottom and the other at the top, then preheat to 450°F (230°C).
Coat the bottom and sides of a cast iron pan with oil. Carefully stretch the pizza dough to cover the bottom of the pan, using your fingers to create dimples.
Distribute the mozzarella cheese evenly over the dough, extending it to the edges. Spoon the sauce over the cheese, spreading it all the way to the edges as well.
Add your favorite toppings and bake on the bottom rack for 18-20 minutes, or until the crust is golden brown and the cheese is melted and starting to brown. To check the crust, lift the edge with a spatula. If needed, keep baking on the bottom rack until the crust is fully browned. For a more browned top, move the pan to the top rack for an additional 2-3 minutes.
Remove the pan and place it on a wire rack for a moment. Use a sharp knife to loosen the edges of the crust, then transfer the pizza to a cutting board with a spatula to prevent sogginess. Serve hot and enjoy!
