Watermelon Cucumber and Feta Salad

Ingredients
 

  • 2 tablespoon virgin olive oil
  • 1 tablespoon mint, finely chopped
  • 1 tablespoon lemon juice
  • ¼ teaspoon fine kosher salt
  • 1/4 teaspoons black pepper
  • 3 cup watermelon, cut into cubes
  • 1 cup cucumber, sliced and quartered
  • 1/2 cup feta cheese, crumbled

Instructions
 

  • In a large bowl, whisk together virgin olive oil, mint, lemon juice, kosher salt, and pepper until well blended.
  • Add the watermelon, cucumber, and feta cheese, then gently toss with a spatula until evenly coated in the dressing.
  • Enjoy right away!
