Preheat your oven to 350°F and line a 15 x 10-inch jelly roll pan with parchment paper, lightly spraying it with non-stick spray. If using a 9x13 baking dish, note that you will have extra batter.
In a large bowl, combine all "bar" ingredients. Use a hand mixer or stand mixer to blend on low speed until moistened, then on medium speed for 2 minutes. Pour the mixture into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
While the bars cool, prepare the frosting.
For the Cream Cheese Frosting:
In a medium mixing bowl, combine all "frosting" ingredients and beat on medium speed until smooth.
Once the bars have completely cooled, spread the frosting evenly over the top. Cut into 48 bars and enjoy!
