The Best Pumpkin Bars

Ingredients
 

  • 2 cups all purpose flour
  • 2 cups sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • ½ teaspoon salt
  • ½ teaspoon cloves
  • 1 cup vegetable oil
  • 15 oz canned pumpkin
  • 4 eggs
  • Cream Cheese Frosting:
  • 3 cups powdered sugar
  • cup butter softened
  • 6 oz cream cheese softened
  • 2 Tb milk
  • 2 teaspoons vanilla extract

Instructions
 

  • Preheat your oven to 350°F and line a 15 x 10-inch jelly roll pan with parchment paper, lightly spraying it with non-stick spray. If using a 9x13 baking dish, note that you will have extra batter.
  • In a large bowl, combine all "bar" ingredients. Use a hand mixer or stand mixer to blend on low speed until moistened, then on medium speed for 2 minutes. Pour the mixture into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • While the bars cool, prepare the frosting.
  • For the Cream Cheese Frosting:
  • In a medium mixing bowl, combine all "frosting" ingredients and beat on medium speed until smooth.
  • Once the bars have completely cooled, spread the frosting evenly over the top. Cut into 48 bars and enjoy!
