Peach cobbler holds a cherished place in Southern cuisine and enjoys popularity worldwide. This classic dessert features luscious, ripe peaches enveloped in a rich, buttery crust, making it an irresistible indulgence for any gathering.
Drain your canned peaches well and pour into 9x 13 baking dish.
Sprinkle 1/3 cup flour, 1/4 teaspoon each of cinnamon, cardamom (or nutmeg), and kosher salt on the peaches. Gently stir, avoiding bruising. Set aside.
For the cobbler topping:
Preheat the oven to 375°F.
In a large bowl, combine dry ingredients: flour, sugar, kosher salt, baking powder, cinnamon, and nutmeg. Whisk together.
In a small bowl, whisk egg yolk and buttermilk. Pour into the dry ingredients, using a pastry cutter or spoon to create a shaggy dough. Pour over peaches.
Cut butter into 1/2 inch pieces, scatter over the mixture, and sprinkle 1 tablespoon of sugar.
Bake at 375°F for 30-40 minutes until the top is uniformly light brown and bubbling.
