Ingredients

  • 2 29 oz cans of sliced peaches
  • 1 cups sugar
  • 1/3 cup all purpose flour
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • For the cobbler topping:
  • 1 1/4 cups all purpose flour
  • 1 egg yolk
  • 3/4 cups granulated sugar
  • 1/4 cup cold butter, sliced in 1/2 tablespoons pieces
  • 1/4 cup buttermilk
  • 1 tablespoons sugar

Instructions

  • Drain your canned peaches well and pour into 9x 13 baking dish.
  • Sprinkle 1/3 cup flour, 1/4 teaspoon each of cinnamon, cardamom (or nutmeg), and kosher salt on the peaches. Gently stir, avoiding bruising. Set aside.

  • Cut butter into 1/2 inch pieces, scatter over the mixture, and sprinkle 1 tablespoon of sugar.
  • Bake at 375°F for 30-40 minutes until the top is uniformly light brown and bubbling.
