The Best Greek Salad

Ingredients
 

  • Dressing:
  • 1/3 cup balsamic vinegar
  • 1/3 cup virgin olive oil
  • 2 tablespoons water
  • 1/4 teaspoon dried basil
  • 1/2 teaspoon oregano
  • 1/4 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Salad:
  • 2 cups grape tomatoes, cut in halves
  • 1 red bell pepper, seeds removed and chopped
  • 1 yellow bell pepper, seeds removed and chopped
  • 1/4 cup red onion, chopped
  • 1 whole English cucumber, chopped
  • 1/4 cup fresh Italian parsley, finely chopped
  • 1/4 cup fresh basil, finely chopped
  • 1 cup Kalamata olives
  • 2/3 cup Feta cheese, crumbled

Instructions
 

  • Dressing:
  • In a small bowl, whisk together balsamic vinegar, olive oil, water, and seasonings until fully blended.
  • Salad:
  • In a large bowl, combine grape tomatoes, bell peppers, red onion, cucumber, parsley, basil, kalamata olives, and feta cheese.
  • Pour the dressing over the salad and toss until evenly coated.
  • Serve immediately, or for enhanced flavor, refrigerate for a few hours or overnight before serving.
