The Best Berry Cobbler

Ingredients
 

  • Berry Filling:
  • 3 cups raspberries
  • 2 1/4 cups blackberries
  • 1 cup strawberries, cut in fourths
  • 1 1/2 tablespoons lemon juice
  • 2 tablespoons cornstarch
  • 2 tablespoons white sugar
  • Cobbler Topping:
  • 1/2 cup butter, room temperature
  • 3/4 cup sugar
  • 2 teaspoons vanilla
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon sea salt

Instructions
 

  • Preheat the oven to 350°F
  • In a 9x9 square baking dish, combine all the berry filling ingredients and stir until well mixed. Spread the berries evenly across the dish.
  • In a separate bowl, mix together all the cobbler topping ingredients until the dry ingredients are just moistened.
  • Using your hands, crumble the topping over the berries, gently pressing some pieces together to form small clumps.
  • Bake for 50-65 minutes, or until the berry filling is bubbling around the edges. The exact baking time may vary depending on the temperature of the berries.
  • Allow the cobbler to rest for about 10 minutes before serving. Enjoy warm, optionally with a scoop of vanilla ice cream.
