The Best Banana Bread

Ingredients
 

  • 1 cup mashed bananas
  • 2 large eggs
  • ½ cup sour cream
  • cup oil
  • 1 cup sugar
  • 2 cups all purpose flour
  • ¼ cup cornstarch
  • 2 teaspoons ground cinnamon
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • For the Crumb Topping
  • ¼ cup butter
  • ½ cup brown sugar
  • ½ cup all purpose flour
  • 1 teaspoon cinnamon

Instructions
 

  • Get ready: Preheat your oven to 360°F and prepare a 9x5 inch loaf pan by greasing and lining it.
  • Crumb topping: Create the crumb topping by combining flour, brown sugar, and cinnamon in a medium bowl. Use your fingertips to blend in the butter until you have crumbly texture. Chill it until you’re ready to use.
  • Mix dry ingredients: In a large mixing bowl, combine all the dry ingredients. Stir them together until they’re well mixed.
  • Mix wet ingredients: In a separate large measuring jug, combine all the wet ingredients until they’re thoroughly blended.
  • Prepare the bread: Pour the wet mixture into the dry ingredients and gently fold them together until the flour is moistened (it’s okay if there are a few lumps). Transfer the batter into the loaf pan and evenly sprinkle it with the crumb topping.
  • Baking time: Bake the banana bread for approximately 50-60 minutes, or until a toothpick inserted comes out clean. Allow it to cool in the pan for 10 minutes, then transfer it to a wire cooling rack to cool completely.
