Tater Tot Breakfast Casserole

Ingredients
 

  • 1 32 oz bag frozen tater tots
  • 8 slices of bacon, cooked and crumbled
  • 1/2 lb Jimmy Dean pork sausage
  • 1/2 cup onion, diced
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup green bell pepper, chopped
  • 2 teaspoons minced garlic
  • 1 ½ cups mild cheddar cheese, freshly grated preferably
  • 1 ½ cup Monterey Jack cheese, freshly grated preferably
  • Egg Mix:
  • 8 large eggs
  • 1 cup heavy cream
  • 1 cup milk
  • 1 4 oz can diced green chilies
  • 1/2 teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Preheat the oven to 350°F and lightly coat a 9”x13” baking dish with non-stick spray. Set aside.
  • In a large skillet over medium-high heat, cook the sausage, onions, and bell peppers, breaking up the sausage as it cooks. Once the sausage is fully cooked and the onions are softened, stir in the garlic and sauté for 30 seconds. Drain any excess grease, then transfer the mixture to the prepared baking dish. Sprinkle with crumbled bacon and let cool slightly.
  • In a large bowl, whisk together all the ingredients for the egg mixture and set aside.
  • Add half of the tater tots to the baking dish, along with half of both cheeses (about ¾ cup each). Stir everything to combine, then spread into an even layer.
  • Pour the egg mixture evenly over the sausage mixture, then top with the remaining tater tots.
  • Bake uncovered at 350°F for 60-70 minutes, or until the eggs are fully set. Remove from the oven, sprinkle with the remaining cheese, and bake for another 5 minutes or until the cheese is melted.
  • Garnish with chopped green onions or fresh parsley before serving. Enjoy!
