Strawberry and Watermelon Salad

Ingredients
 

  • Fruit Salad:
  • 3 cups strawberries, cut into halves
  • 2 tablespoon fresh mint, finely chopped
  • 4 cups watermelon, cubed
  • ½ cup cottage cheese
  • Honey Lime Dressing:
  • 2 tablespoons avocado oil
  • 2 tablespoons lime juice
  • 2 teaspoons honey
  • ½ teaspoon sea salt

Instructions
 

  • In a small bowl, combine all the salad dressing ingredients and whisk until well blended. Set it aside.
  • Remove the stems from the strawberries and slice them into thirds or quarters.
  • Cut the watermelon into 1-inch cubes and place them on a serving platter along with the sliced strawberries. Gently fold in the chopped mint and crumbled cottage cheese. Finish by drizzling the dressing over the top, adding a squeeze of fresh lime juice, and a light sprinkle of sea salt.
