Spinach Stuffed Chicken

Ingredients
 

  • 4 4 oz chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 ounces cream cheese softened
  • 1/4 cup parmesan cheese grated
  • 1 tablespoon mayonnaise
  • 2 cup spinach chopped
  • 2 cloves garlic minced

Instructions
 

  • Preheat the oven to 375°F.
  • Wash and chop spinach leaves. If necessary, grate Parmesan cheese into a bowl and set aside.
  • In a small bowl, combine cream cheese, Parmesan, mayonnaise, spinach, and garlic. Set aside.
  • Carefully slice a pocket in each chicken breast without cutting all the way through.
  • Drizzle oil over the chicken.
  • In a small bowl, mix paprika, salt, garlic, and onion powder. Sprinkle this mixture over the chicken, rubbing it on both sides.
  • Stuff the spinach mixture into the pockets of the chicken breasts.
  • Place the chicken in a baking dish. Bake for 25-30 minutes or until the chicken reaches 165°F.
