Trim the steak to fit your skillet, then pat it dry and season with salt and pepper on both sides.
Heat oil in a large skillet over medium-high heat until it’s very hot. Add the steak and sear both sides for about 2-3 minutes per side for medium-rare, or to your desired doneness. Transfer the steaks to a plate and let them rest.
In another skillet, melt butter over low heat, then add minced garlic. Stir the garlic with a spatula until it starts to brown. Remove it from heat and transfer it to a bowl immediately, being careful not to overcook as it can burn quickly.
Slice the steak against the grain and drizzle with the garlic butter. Garnish with fresh parsley and serve promptly.
