Shrimp Tacos With Mango Salsa

Ingredients
 

  • For the shrimp:
  • 2 teaspoons avacado oil
  • 1 1/4 lb shrimp peeled and deveined
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon salt
  • 8 tortillas
  • Mango Salsa:
  • 2 cups mango, diced
  • ½ cup red bell pepper, diced
  • ¼ cup red onion, diced
  • 1 small Habanero pepper, remove all seed and dice finely
  • 3 teaspoons lime juice
  • ¼ cup cilantro, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Mango Salsa:
  • Combine all ingredients in a bowl, then taste and adjust seasoning with salt and pepper as needed.
  • Refrigerate for at least 10 minutes to allow the flavors to meld together.
  • Shrimp Tacos:
  • In a large skillet, heat olive oil over high heat. Sprinkle chili powder and salt on both sides of the shrimp. Arrange the shrimp in a single layer and cook for 2–3 minutes on each side, or until they turn pink and are fully cooked.
  • Warm the tortillas, then fill each with a portion of shrimp. Top with the mango salsa and serve right away.
