Pumpkin Spice Cookies

Ingredients
 

  • 3 cups all-purpose flour
  • 2 eggs , room temperature
  • 2 cups white chocolate chips
  • 1 cup light brown sugar, packed
  • 1 cup salted butter , room temperature
  • ½ cup granulated sugar
  • 2 teaspoon vanilla extract
  • 2 teaspoon pumpkin spice
  • 1 teaspoon salt
  • 1 teaspoon baking soda

Instructions
 

  • Preheat your oven to 375°F and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, pumpkin spice, baking soda, and salt, then set it aside.
  • In a mixer on medium speed, cream the butter, brown sugar, and granulated sugar until the mixture is light and fluffy, which should take about 5 minutes.
  • Use a rubber spatula to scrape down the sides of the bowl. Add the vanilla and eggs, mixing just until they are incorporated.
  • Reduce the mixer speed to low and gradually add the flour mixture. Gently fold in the white chocolate chips and stir until just combined.
  • Scoop about two tablespoons of cookie dough onto the lined baking sheet, spacing the scoops about two inches apart.
  • Bake for 10-14 minutes or until the edges are golden brown.
