Preheat your oven to 375°F and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, pumpkin spice, baking soda, and salt, then set it aside.
In a mixer on medium speed, cream the butter, brown sugar, and granulated sugar until the mixture is light and fluffy, which should take about 5 minutes.
Use a rubber spatula to scrape down the sides of the bowl. Add the vanilla and eggs, mixing just until they are incorporated.
Reduce the mixer speed to low and gradually add the flour mixture. Gently fold in the white chocolate chips and stir until just combined.
Scoop about two tablespoons of cookie dough onto the lined baking sheet, spacing the scoops about two inches apart.
Bake for 10-14 minutes or until the edges are golden brown.
