Pumpkin Chocolate Chip Muffins

Ingredients
 

  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1/4 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 cup semi-sweet chocolate chips
  • 3/4 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions
 

  • Preheat your oven to 425°F.
  • Prepare a 12-cup muffin pan with paper liners or non-stick spray. In a large bowl, combine flour, baking soda, cinnamon, and salt.
  • Add chocolate chips and mix. In another bowl, whisk remaining ingredients. Pour wet mixture into dry, stir until just combined.
  • Divide batter among muffin cups.
  • Bake at 425°F for 5 mins, then reduce to 350°F and bake 15 mins until a toothpick inserted comes out clean.
