Pork Chops With Apples and Caramelized Onions

Ingredients
 

  • 4 pork chops, bone-in 1/2 thick
  • 2 Honeycrisp apples, sliced unpeeled
  • 1 sweet yellow onion, sliced
  • ½ cup chicken broth
  • ½ cup 100% apple juice
  • 3 tablespoons butter, separated
  • ½ tablespoon of Dijon mustard
  • 1 teaspoon minced garlic
  • ½ teaspoon fresh thyme, chopped
  • ½ teaspoon fresh rosemary, chopped
  • salt , to taste
  • pepper, to taste
  • olive oil, for coating the pan

Instructions
 

  • Season both sides of the pork chops with salt and pepper. Allow them to rest for 15 to 20 minutes or refrigerate them overnight for even better flavor.
  • In a large skillet, heat olive oil over medium-high heat. Cook the pork chops for approximately 5 minutes per side or until they reach an internal temperature of 155 to 160 degrees Fahrenheit. If using bone-in pork chops, expect an additional 2 minutes of cooking time, especially around the bone.
  • In the same skillet, melt 2 tablespoons of butter over medium heat. Cook the sliced onions, stirring occasionally, until they become soft and caramelized, which takes around 12 to 15 minutes. Avoid stirring too frequently to allow the onions to caramelize.
  • Introduce minced garlic, rosemary, and thyme, and cook for another 1 to 2 minutes until the mixture becomes fragrant.
  • Add the remaining 1 tablespoon of butter, dijon mustard, chicken broth, and apple juice. Ensure all ingredients are well combined while using a wooden spoon to scrape up the flavorful brown bits.
  • Incorporate the sliced apples into the mixture and simmer for approximately 5 to 7 minutes until the apples soften but still maintain some crispness. Adjust the seasoning with additional salt and pepper as per your taste preferences. The sauce should slightly thicken while remaining relatively thin.
  • Place the cooked pork chops back into the pan, nestling them under the apples. Allow them to simmer for an additional 1 to 2 minutes.
