Parmesan Crispy Oven Fried Chicken

Ingredients
 

  • 3 boneless, skinless chicken breasts
  • 1 cup seasoned Italian breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon ground paprika
  • cup mayonnaise

Instructions
 

  • Preheat your oven to 400°F. In a large shallow dish or plate, mix together the breadcrumbs, Parmesan cheese, garlic powder, salt, pepper, and paprika. Set aside.
  • - Using a sharp knife, carefully slice each chicken breast in half lengthwise to create thin fillets. Place the fillets between two pieces of plastic wrap on a cutting board, and use a meat tenderizer to gently pound them to about ⅜-inch thick.
  • - Coat both sides of the chicken fillets with mayonnaise, ensuring an even layer. Dredge each fillet in the breadcrumb mixture, then arrange them on a baking sheet coated with cooking spray.
  • - Bake for 17-20 minutes, or until the chicken is fully cooked and the coating is golden and crispy.
