Instructions
Start by preheating your oven to 400 degrees. Line a large baking tray with foil and give it a light coating of olive oil cooking spray.
Slice the jalapenos lengthwise, removing the seeds and partially clearing out the pith/ribs.
In a spacious bowl, combine cream cheese, Colby Jack cheese, and bacon bites
Carefully stuff the jalapeno halves with the cheese mixture.
Unroll the crescent rolls and create 4 rectangles by joining 2 triangles, sealing at the perforations. You should end up with 4 rectangles. Then, cut each rectangle into 10 strips.
Wrap each cheese-filled jalapeno half with 2 strips of dough, ensuring space for the eyes.
Arrange these dough-wrapped “mummies” on the prepared baking tray.
Bake until they turn a lovely golden color, approximately 12 minutes.
As soon as they’re out of the oven, delicately press 2 candy eyeballs into each mummy.
Allow them to cool slightly, and serve these delightful treats while they’re still warm. Enjoy!
