Begin by preheating your oven to 400 degrees.
Warm up a large cast iron skillet over medium-high heat on the stovetop for a few minutes.
Add 2 tablespoons of olive oil to the hot skillet and place the chicken thighs with the skin side down to achieve crispy skin.
While the chicken is browning, proceed to dice the sweet potatoes, onions, and apples.
Mix the remaining one tablespoon of olive oil, along with salt, pepper, and maple syrup.
Coat the sweet potatoes, apples, and onions in this oil and maple syrup mixture.
Flip the chicken thighs so that the skin side is facing up, and arrange the red potatoes, apples, and onions around them in the cast iron skillet.
Sprinkle thyme over the dish.
Bake for approximately one hour, or until the chicken reaches an internal temperature of 165 degrees and the potatoes and apples become fork-tender.
Allow it to cool for a few minutes before serving.
