Maple Roasted Chicken

Ingredients
 

  • 4 chicken thighs, bone-in, skin on
  • 1 onion - cut into wedges
  • 4 medium sized red potatoes, leaving skin on and large dice
  • 1 Granny Smith apple , peeled and diced
  • 3 tablespoons maple syrup
  • 3 tablespoons olive oil
  • 1 tablespoon fresh thyme
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon black pepper

Instructions
 

  • Begin by preheating your oven to 400 degrees.
  • Warm up a large cast iron skillet over medium-high heat on the stovetop for a few minutes.
  • Add 2 tablespoons of olive oil to the hot skillet and place the chicken thighs with the skin side down to achieve crispy skin.
  • While the chicken is browning, proceed to dice the sweet potatoes, onions, and apples.
  • Mix the remaining one tablespoon of olive oil, along with salt, pepper, and maple syrup.
  • Coat the sweet potatoes, apples, and onions in this oil and maple syrup mixture.
  • Flip the chicken thighs so that the skin side is facing up, and arrange the red potatoes, apples, and onions around them in the cast iron skillet.
  • Sprinkle thyme over the dish.
  • Bake for approximately one hour, or until the chicken reaches an internal temperature of 165 degrees and the potatoes and apples become fork-tender.
  • Allow it to cool for a few minutes before serving.
