Easy Sweet Potato Pie

Ingredients
 

  • 1 9 in Refrigerate pie crust
  • 2 eggs lightly whisked
  • 2 sweet potatoes, medium sized
  • ¾ cup packed light brown sugar
  • ½ cup evaporated milk
  • ¼ cup butter, room temperature
  • 1 ½ teaspoon vanilla extract
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ teaspoon ground ginger

Instructions
 

  • Preparing the Potatoes:
  • Preheat your oven to 425°F.
  • Poke holes all over the potatoes with a fork.
  • Bake the potatoes for 45-50 minutes, turning them halfway through.
  • Making the Pie Filling:
  • Preheat your oven to 375°F.
  • Let the baked potatoes cool for 15 minutes.
  • Peel and mash the sweet potatoes in a bowl.
  • Add the remaining ingredients to the mashed potatoes and whisk until the mixture is smooth and well-combined.
  • Pour the mixture into a prepared pie pan.
  • Bake for 40-45 minutes, or until the center of the pie is set.
  • Remove the pie from the oven and let it cool for at least an hour before serving.
