Preparing the Potatoes:

Poke holes all over the potatoes with a fork.
Bake the potatoes for 45-50 minutes, turning them halfway through.
Making the Pie Filling:
Preheat your oven to 375°F.
Let the baked potatoes cool for 15 minutes.
Peel and mash the sweet potatoes in a bowl.
Add the remaining ingredients to the mashed potatoes and whisk until the mixture is smooth and well-combined.
Pour the mixture into a prepared pie pan.
Bake for 40-45 minutes, or until the center of the pie is set.
Remove the pie from the oven and let it cool for at least an hour before serving.
