Using a stand mixer, combine cream cheese and heavy whipping cream until smooth and creamy. Add sugar, powdered sugar, and vanilla, and continue blending until well combined. Chill the filling in the refrigerator until ready to use with the crepes.
Heat the premade crepes according to package instructions.
Lay each crepe flat and spoon about 2 tablespoons of the filling onto the center, spreading it evenly. Place a few strawberry slices on top of the filling. Roll up the crepe and repeat for the remaining crepes.
Arrange two or three filled crepes on a serving plate. Top with additional strawberry slices. Serve and enjoy your delightful cheesecake-filled crepes!
