Season both sides of the shrimp generously with salt, pepper, and a teaspoon of Old Bay Seasoning.
In a large skillet, heat olive oil over medium-high heat until shimmering.
Carefully place the seasoned shrimp in the skillet and cook for 2 to 3 minutes on each side until they turn pink and opaque, flipping them once using tongs.
Transfer the cooked shrimp to a plate and keep them warm. Into the same skillet, add minced garlic and sauté for about a minute until fragrant.
Deglaze the skillet by adding white wine and lemon juice, scraping up any browned bits from the bottom of the pan using a wooden or silicone spoon.
Bring the mixture to a boil, then reduce the heat and let it simmer for 5 minutes. Stir in the butter and another teaspoon of Old Bay Seasoning until the butter is fully melted and incorporated into the sauce.
Return the cooked shrimp to the skillet, stirring gently to coat them in the sauce.
Taste and adjust seasoning with salt and pepper if needed. Sprinkle chopped parsley over the shrimp and finish with a garnish of grated parmesan cheese before serving hot.
