Easy Pumpkin French Toast

Ingredients
 

  • 12 slices thick-cut Brioche
  • 4 large eggs
  • 2/3 cup milk
  • 1/2 cup pumpkin puree
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • oil or butter, for pan

Instructions
 

  • Combine all the ingredients (excluding the bread) in a medium bowl or shallow dish and whisk until smooth.
  • Preheat a frying pan over low-medium heat or set a griddle to 350°F, and lightly grease with oil or cooking spray.
  • Dip a slice of bread into the mixture, ensuring both sides are coated, then gently shake off any excess.
  • Cook for 2-4 minutes on one side until golden brown, then flip and cook the other side until golden and puffy.
  • Repeat with the remaining slices, adjusting the heat as needed. Serve immediately with syrup and whipped cream.
