Easy Pecan Breakfast Coffee Cake

Ingredients
 

  • 1 package white cake mix, regular size
  • 2 large eggs, room temperature
  • 2/3 cup water
  • 1/2 cup all-purpose flour
  • 1/4 cup vegetable oil
  • topping:
  • 1 cup packed brown sugar
  • 3/4 cup chopped pecans
  • 1/4 cup butter, melted
  • drizzle:
  • 1 cup confectioners' sugar
  • 1 tablespoon light corn syrup
  • 1 tablespoon water

Instructions
 

  • Preheat the oven to 350°F. Set aside 1 cup of the cake mix for later use.
  • In a large mixing bowl, blend together eggs, water, flour, oil, and the remaining cake mix on low speed for 30 seconds, then increase to medium speed and beat for 2 minutes.
  • Pour the batter into a greased 13x9-inch baking pan.
  • In a separate small bowl, mix together brown sugar, pecans, and the reserved cake mix. Stir in butter until the mixture becomes crumbly.
  • Sprinkle this crumb mixture evenly over the batter in the baking pan.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Meanwhile, prepare the glaze by combining confectioners' sugar, corn syrup, and water until smooth.
  • Once the cake is baked, drizzle the glaze over it while still warm. Serve the cake warm and enjoy.
