Cook the bacon until crispy, then crumble and set aside.
In a large bowl, combine all the meatloaf ingredients except the BBQ sauce. Mix until just combined.
Shape the mixture into 8 individual round loaves and place them on a lined or greased baking sheet. Gently press a small well into the center of each one.
Spoon or brush BBQ sauce over the top of each mini loaf.
Bake for about 25 minutes. For a caramelized finish, switch to broil and cook for an additional 2 to 5 minutes.
Remove from the oven and let rest for 5 minutes before serving.
