Easy Mini BBQ Meatloaf

Ingredients
 

  • 2 lbs ground beef
  • 6 oz ketchup
  • 1 teaspoon apple cider vinegar
  • 4 slices thick-cut bacon, cooked and chopped
  • 1/2 cup plain breadcrumbs
  • 2 large eggs, lightly beaten
  • 1 teaspoon finely minced fresh onion
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 2 tablespoons soy sauce
  • 1 teaspoon Dijon mustard
  • 1/2 cup Masterpiece BBQ sauce

Instructions
 

  • Set your oven to 425°F.
  • Cook the bacon until crispy, then crumble and set aside.
  • In a large bowl, combine all the meatloaf ingredients except the BBQ sauce. Mix until just combined.
  • Shape the mixture into 8 individual round loaves and place them on a lined or greased baking sheet. Gently press a small well into the center of each one.
  • Spoon or brush BBQ sauce over the top of each mini loaf.
  • Bake for about 25 minutes. For a caramelized finish, switch to broil and cook for an additional 2 to 5 minutes.
  • Remove from the oven and let rest for 5 minutes before serving.
