In a skillet over medium-high heat, warm the butter and avocado oil. Place the salmon fillets in the pan, flesh-side down, and cook for 3-4 minutes until golden. Flip and cook the other side for another 2 minutes.
Pour in the lemon juice and let it cook down by half, which should take about a minute if the pan is hot. Stir in the minced garlic and saute for about 30 seconds until it becomes aromatic.
Push the salmon to the sides of the pan and pour in the honey and soy sauce. Stir to blend the flavors and let it gently simmer until the sauce thickens into a glaze about 30 seconds to 1 minute.
Spoon the sauce over the salmon to coat it evenly, then remove from heat once the fish is done to your preference.
Sprinkle with salt and black pepper as desired, garnish with lemon slices, and serve with your favorite side like rice, veggies, or a fresh salad.
