Easy Hamburger Vegetable Soup

Ingredients
 

  • 2 tablespoon olive oil
  • 1 lb ground beef
  • 1 sweet yellow onion, diced
  • 1 stick of celery
  • 1 teaspoon minced garlic
  • 3 golden Yukon potatoes , peeled and diced
  • 5 cups beef stock
  • 15 oz canned diced tomatoes , with liquid
  • 8 oz canned tomato sauce
  • 2 teaspoons Worcestershire sauce
  • 1 1/2 teaspoons Italian seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 3 cups frozen mixed vegetables, your preference

Instructions
 

  • Sauté the beef and vegetables – Warm olive oil in a medium-sized soup pot over medium heat.
  • Add the ground beef, onion, celery, and garlic, cooking until the beef is fully browned and no pink remains. Drain any excess grease.
  • Add ingredients and simmer – Mix in the potatoes, broth, diced tomatoes, tomato sauce, Worcestershire sauce, Italian seasoning, salt, and pepper.
  • Let the mixture come to a gentle simmer and cook for about 10 minutes.
  • Cook until potatoes are soft – Keep simmering for another 15–20 minutes, or until the potatoes are fork-tender.
