Easy Cucumber Mozzarella Salad

Ingredients
 

  • 4 tablespoons olive oil
  • 2 tablespoon balsamic vinegar
  • 2 tablespoon dried oregano
  • 2 tablespoon dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 english cucumber, skin on and sliced
  • 3 cups cherry tomatoes, halved
  • 1 lb fresh mozzarella

Instructions
 

  • In a small bowl, combine olive oil, balsamic vinegar, dried oregano, dried basil, and a pinch of salt and pepper.
  • Whisk the mixture until everything is fully blended.
  • Set it aside to allow the flavors to develop as you prepare the rest of the salad.
  • Thinly slice the cucumber and place it in a large mixing bowl.
  • Cut the cherry tomatoes in half and add them in with the cucumber.
  • Chop the mozzarella into small, bite-sized pieces and toss them into the bowl.
  • Gently mix to evenly distribute all the ingredients.
  • Drizzle the dressing over the salad and toss until everything is well coated.
  • Let the salad rest for about 10 minutes before serving to allow the flavors to soak in. Enjoy!
