Easy Crispy Beef Taquitos

Ingredients
 

  • 1 1/2-2 lb beef chuck roast
  • Salt and ground black pepper
  • 14 oz beef broth
  • ½ cup salsa
  • 1 1/2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1/2 tablespoon cumin
  • 1 teaspoon dry minced onion powder
  • 20 corn tortillas
  • Oil for frying
  • toothpicks

Instructions
 

  • Using a slow cooker sprinkle salt and pepper on the roast.
  • Combine chili powder, garlic, cumin, minced onion, beef broth, and salsa.
  • Place everything in the slow cooker and cook on LOW for 7-8 hours, or until the meat is tender and can be easily shredded.
  • Transfer the roast to a plate and shred the meat, removing any large chunks of fat. Put the shredded meat back into the slow cooker to keep warm.
