Easy Chocolate Chip Butterscotch Cookies

Ingredients
 

  • 2 large eggs
  • 2 ½ cups all-purpose flour
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon baking powder

Instructions
 

  • Preheat the Oven:
  • Set your oven to 350°F (175°C). Line your baking sheets with parchment paper or silicone baking mats.
  • Cream the Butter and Sugars:
  • In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until the mixture is light and fluffy, about 2-3 minutes.
  • Add Eggs and Vanilla:
  • Beat in the eggs one at a time, then add the vanilla extract and mix until fully incorporated.
  • Combine Dry Ingredients:
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Mix Wet and Dry Ingredients:
  • Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  • Fold in the Chips:
  • Gently fold in the butterscotch and chocolate chips, ensuring they are evenly distributed throughout the dough.
  • Shape the Cookies:
  • Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake:
  • Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers remain slightly soft.
  • Cool:
  • Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
