Easy Chewy Gingerbread Cookies

Ingredients
 

  • ¾ cup butter softened
  • 2 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 large egg
  • ¼ cup molasses unsulphured
  • 2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon dried ground ginger
  • ½ teaspoon salt
  • granulated sugar, for rolling the cookies in

Instructions
 

  • Preheat your oven to 350°F. Start by beating the butter and sugar together until the mixture becomes light and fluffy, which should take about 2-3 minutes with an electric mixer. Then, add the egg and molasses, mixing well until combined.
  • In a separate bowl, mix together the flour, baking soda, salt, cinnamon, and ginger. Gradually add these dry ingredients to the wet mixture, stirring until everything is well incorporated.
  • Shape or scoop the dough into balls that are slightly smaller than a golf ball. For an extra touch, you can roll the dough balls in granulated sugar. Arrange them on a baking sheet, spacing them about 2-3 inches apart to allow for spreading.
  • Bake the cookies for 10-12 minutes. Once done, remove them from the oven and let them cool on the baking sheet for about 10 minutes before transferring them to a wire rack to cool completely.
