Easy Cajun Shrimp Boil

Ingredients
 

  • 1 lb red potatoes, small or baby sized
  • 12 corn on the cob bites, Green Giant Corn Cob Bites; Butter, Salt & Pepper, 16 oz Bag (Frozen)
  • 1 lb shrimp, raw and thawed, peeled and deveined
  • 12 oz Hillshire Farm Beef Smoked Sausage, cut into 1 inch pieces
  • 2 teaspoons minced garlic
  • 4 tablespoons butter, melted
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons Slap Yo Momma seasoning
  • 2 lemons, cut into wedges
  • 1/4 cup fresh parsley, chopped for garnish

Instructions
 

  • Preheat oven to 400°F
  • Precook the Potatoes and Corn:
  • Bring 8 cups of water to a boil in a large pot on the stove.
  • Add the potatoes and corn; reduce heat to a steady simmer and cook for 10 minutes.
  • Drain and set aside.
  • Combine and Season:
  • In a large mixing bowl, combine the shrimp, sausage, onion, garlic, cooked potatoes, and corn.
  • Pour in the melted butter and season generously with Slap Yo Momma, kosher salt, and pepper.
  • Toss to coat everything evenly.
  • Assemble Foil Packs:
  • Divide the mixture evenly between the 4 foil sheets.
  • Fold and seal each packet tightly to trap in steam and juices.
  • Bake in Oven:
  • Place foil packs on a rimmed baking sheet (to catch any drips).
  • Bake at 400°F for 15-18 minutes, flipping the packs halfway through for even cooking.
  • Finish and Serve:
  • Carefully open foil packs (watch for hot steam).
  • Garnish with lemon wedges and chopped parsley.
  • Serve hot and enjoy!
