Boil a pot of salted water and cook the egg noodles according to the package instructions. Preheat your oven to 400 degrees F.
While the noodles are boiling, warm the olive oil in a large skillet over medium-high heat.
Add the ground beef to the skillet and cook for 4-5 minutes, breaking it apart with a spatula.
Stir in the onion and garlic, cooking for another 5 minutes until the onion is soft and the beef is fully cooked. Season with salt and pepper.
Mix in the tomato sauce, diced tomatoes, and Italian seasoning, stirring until well combined.
Drain the noodles and mix them into the skillet with the beef mixture.
Transfer the beef and noodle mixture into a 9"x13" baking dish coated with cooking spray. Sprinkle with cheddar cheese.
Bake for 10-15 minutes until the cheese is melted. Garnish with parsley before serving.
