Easy Beef Noodle Casserole

Ingredients
 

  • 12 oz wide egg noodles uncooked
  • 2 teaspoons olive oil
  • 1 1/4 lbs ground beef
  • 1 onion finely chopped
  • 2 teaspoons minced garlic
  • salt and pepper to taste
  • 16 oz canned tomato sauce
  • 15 oz can diced tomatoes, drained
  • 2 teaspoons Italian seasoning
  • 2 cups shredded cheddar cheese
  • 2 tablespoons chopped parsley
  • cooking spray

Instructions
 

  • Boil a pot of salted water and cook the egg noodles according to the package instructions. Preheat your oven to 400 degrees F.
  • While the noodles are boiling, warm the olive oil in a large skillet over medium-high heat.
  • Add the ground beef to the skillet and cook for 4-5 minutes, breaking it apart with a spatula.
  • Stir in the onion and garlic, cooking for another 5 minutes until the onion is soft and the beef is fully cooked. Season with salt and pepper.
  • Mix in the tomato sauce, diced tomatoes, and Italian seasoning, stirring until well combined.
  • Drain the noodles and mix them into the skillet with the beef mixture.
  • Transfer the beef and noodle mixture into a 9"x13" baking dish coated with cooking spray. Sprinkle with cheddar cheese.
  • Bake for 10-15 minutes until the cheese is melted. Garnish with parsley before serving.
