Easy Beef Empanadas

Ingredients
 

  • 1 lb ground beef
  • 1 10 piece pack of Goya Empanada dough
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1/4 cup yellow onion
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions
 

  • To make these delicious empanadas, start by cooking ground beef, onions, and bell pepper in a large skillet until the beef is cooked through and the vegetables are tender. Drain any excess fat from the skillet.
  • Next, add cumin, garlic, salt, pepper, and chili powder to the ground beef mixture and cook for an additional 2 minutes. Remove the skillet from the heat.
  • Lay an empanada disk on parchment paper. Spoon 2-3 tablespoons of the filling onto the center of the disk, then top with 1 tablespoon of cheese.
  • Fold the empanada circle in half over the filling, pressing the edges down firmly with a fork to seal. Repeat this process with the remaining empanada disks and filling.
  • In a deep skillet, heat cooking oil to 350 degrees Fahrenheit. Carefully place 2 empanadas at a time into the hot oil and fry for 1-2 minutes on each side or until golden brown. Remove the fried empanadas to a plate lined with paper towels to drain excess oil.
  • Once all the empanadas are fried, serve them with your favorite salads, salsas, and guacamole for a delicious meal! Enjoy!
