In a mixing bowl, cream together the softened butter, vanilla, and ½ cup powdered sugar until the mixture is fluffy.
Mix in Dry Ingredients:
Stir in the flour and pecans until everything is well combined and the pecans are evenly distributed throughout the dough.
Form Dough Balls:
Use a tablespoon scoop to portion out the dough. Roll each portion into a ball with your hands and place them on an ungreased cookie sheet, spacing them about 2 inches apart.
Bake Cookies:
Bake for approximately 13 minutes. The cookies should not begin to brown.
Coat in Sugar:
While the cookies are still hot but cool enough to handle, gently roll each one in a bowl with 1 cup powdered sugar. Set them on a tray to finish rolling the rest. After completing the first round, roll each cookie again in the powdered sugar. Let them cool on a rack or pan.
Optional: Once fully cooled, for an extra snowy appearance, roll each cookie one more time in the powdered sugar until generously coated.
