Cranberry Oatmeal Cookies

Ingredients
 

  • 3 cups old fashioned oats
  • 1 1/2 cups flour
  • 1 cup butter , room temperature
  • 2 eggs
  • 1 cup brown sugar
  • 1 cup fresh cranberries
  • 1 cup white chocolate chips
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions
 

  • Preheat the oven to 350F.
  • Cream together butter and sugars in a large mixing bowl until smooth. Add eggs one at a time, then mix in the vanilla.
  • In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  • Combine the flour mixture with the butter/sugar mixture, stirring until well combined.
  • Add oats, cranberries, and white chocolate chips, and mix thoroughly.
  • Drop approximately a tablespoon of dough onto an ungreased cookie sheet, ensuring 2 inches of space between each mound.
  • Bake for around 10-12 minutes or until the cookies begin to brown around the edges. Allow them to cool on a rack.
