Crab Stuffed Shrimp

Ingredients
 

  • 1/2 lb Jumbo Shrimp
  • 6 oz Jumbo lump crab meat
  • 1/2 teaspoon olive oil
  • 2 tablespoon mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 cup bread crumbs
  • 2 teaspoon old bay, divided
  • 2 teaspoon Cajun seasoning, divided
  • 2 teaspoon lemon pepper, divided
  • 1 teaspoon paprika, divided
  • parsley , chopped for garnish
  • Lemon wedges for garnish
  • 4 tablespoon butter
  • 1 teaspoon minced garlic

Instructions
 

  • Begin by seasoning the shrimp with half of your spice blend in a small bowl. Add avocado oil and ensure the seasoning is thoroughly mixed. Set this aside.
  • In a separate bowl, combine mayo, mustard, lemon juice, and crackers or bread crumbs with the remaining seasoning. Once mixed well, gently fold in the lump crab meat.
  • Butterfly the shrimp at the bottom to allow them to sit flat in the baking dish. Stuff the opposite side of each shrimp with about a teaspoon of the crab mixture and arrange them in the baking dish. No need to oil the dish as the shrimp were coated with olive oil.
  • Place the shrimp in the oven for 10-13 minutes, or until the crab mixture attains a golden brown hue. Meanwhile, melt butter, garlic, and parsley, then drizzle this mixture over the stuffed shrimp. Finally, garnish with lemon wedges and additional parsley. Serve up and savor the delight!
