Classic Southern Pecan Pie

Ingredients
 

  • 2 cups pecans, quartered
  • 3 tablespoons butter, melted
  • 3 eggs , whisked
  • ¾ cups plus 2 tablespoons light corn syrup
  • ¾ cups light brown sugar
  • teaspoons vanilla extract
  • 1 refrigerated pie crust, pillsbury
  • 1/8 teaspoon salt

Instructions
 

  • Preheat your oven to 350ºF. Line a pie plate with the pie crust, leaving a slight overhang around the edges to prevent it from slipping down, and pierce it with a fork. Bake the crust for 8 to 10 minutes until it's just turning golden but not brown.
  • In the meantime, combine eggs, corn syrup, brown sugar, vanilla, and melted butter in a 2-quart bowl, whisking until smooth. Mix in the chopped pecans.
  • Once the crust is done, pour the pecan mixture into it.
  • Bake in the preheated oven for about an hour, or until the filling is set. Allow the pie to cool for at least an hour before serving to avoid a runny consistency when cutting.
