Cheesy Broccoli Rice Casserole

Ingredients
 

  • 1 cup white rice, uncooked
  • 1 16 oz package frozen broccoli florets
  • 2 cups shredded mild or medium cheddar cheese, divided
  • 1 10.75 oz can cream of mushroom soup
  • 1/2 cup milk
  • 1 sweet yellow onion, finely diced
  • 1 tsp salt
  • 1/2 tsp. black pepper
  • 1/4 tsp. paprika
  • 1/4 tsp. garlic powder

Instructions
 

  • Start by thawing the broccoli and microwaving it for about 5 minutes. Make sure to drain it thoroughly and cut any large florets into bite-sized pieces.
  • In a mixing bowl, combine warm cooked rice, diced onion, cream of mushroom soup, milk, salt, pepper, garlic powder, paprika, and 1 cup of shredded cheddar. Stir until well combined, then gently fold in the broccoli.
  • Transfer the mixture into a greased 9x13-inch baking dish and sprinkle the remaining 1 cup of shredded cheddar cheese on top.
  • Bake at 350℉ for 35 - 40 minutes until it's bubbling and the cheese is just starting to develop a golden brown hue. Enjoy!
