Caramel Pumpkin Pecan Cobbler

Ingredients
 

  • 1 cup and 3 tablespoons all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 cup pumpkin puree, not pie filling
  • 1/4 cup milk
  • 1/4 cup melted butter
  • 1 1/2 teaspoons vanilla extract
  • Topping:
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup chopped pecans
  • 1 1/2 cups very hot water
  • 1 cup pecan halves for garish/ decorticating

Instructions
 

  • Preheat your oven to 350°F.
  • In a medium bowl, mix together flour, baking powder, salt, sugar, and spices. Set this mixture aside.
  • In a separate bowl, combine pumpkin, milk, melted butter, and vanilla until well blended. Pour this mixture into the dry ingredients and stir until a thick batter forms. Transfer the batter into a small 8-inch casserole dish with high sides.
  • In another bowl, combine sugar, brown sugar, and pecans. Sprinkle this mixture evenly over the top of the batter.
  • Carefully pour hot water over the entire surface without stirring.
  • Bake for 40 minutes, or until the center is set. (Place the dish on a baking sheet to catch any overflow.)
  • Allow to cool for 5-10 minutes before serving. Garnish with additional pecans and vanilla ice cream if desired.
