Ingredients

  • 1 1/4 lbs bison steaks cut into 1 inch cubes
  • salt and course black pepper to taste
  • Cowboy Butter:
  • 6 tablespoons butter, melted
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 2 teaspoons minced garlic
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon paprika
  • 2 tablespoon fresh chopped parsley
  • 1 tablespoon freshly chopped chives
  • 2 teaspoons fresh minced thyme
  • 1/4 teaspoon red pepper flakes

Instructions

  • To begin, cut your bison steak into one-inch cubes. Heat 1 tablespoon of olive oil in a medium-sized skillet over medium-high heat.
  • Season the steak bites with salt and pepper, and add them to the pan, cooking until they achieve a golden brown hue.
  • Remove the cooked steak and place it in a serving dish.
  • Now, for the cowboy butter sauce, in a small bowl, mix together melted butter, lemon juice, garlic, mustard, cayenne, and paprika. Whisk the sauce until it’s well combined.
  • Next, incorporate parsley, chives, crushed red pepper flakes, and thyme, and season the sauce with salt and pepper.
  • Drizzle this delightful sauce over the steak bites and serve. Any extra can be used as a dipping sauce for those who desire more flavor!
