Before you start, mix together the beef seasoning and gather your gravy ingredients.
Cut the meat into 1-inch cubes, removing any excess fat.
Combine the beef seasoning and evenly coat the meat. Sprinkle flour over it and toss again.
Heat 3 tablespoons of olive oil in a large skillet over medium-high heat. Brown the meat in batches, avoiding overcrowding. Sear each side for 30-45 seconds, adding more oil if needed. Transfer to a plate (don't fully cook it; it'll simmer in the gravy for flavor).
Add butter and garlic, cooking for 1 minute.
Incorporate all the remaining gravy ingredients, except the cornstarch mixture. Bring it to a boil.
Blend cornstarch with cold water, whisking it into the sauce gradually. Stir continuously until reaching your desired thickness.
Reduce the heat to medium-low, return the beef along with its juices. Simmer with the lid partially covered for 10-15 minutes until the beef is fully cooked. Remove from heat. Enjoy!
