Beef Tips and Gravy

Ingredients
 

  • 1 ½ lbs. sirloin tips
  • 3 tablespoons flour
  • 3 tablespoons olive oil
  • 1 teaspoon brown sugar
  • 1/4 teaspoon black pepper
  • ½ teaspoon EACH: salt, garlic powder,
  • onion powder, chili powder, paprika
  • Gravy:
  • 2 cups beef broth
  • 2 tablespoons butter
  • 1 1/2 teaspoons minced garlic
  • 1 ½ teaspoons Worcestershire sauce
  • 1 beef bouillon cube
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1/4 teaspoon dried rosemary
  • ¼ teaspoon dried thyme
  • 3 tablespoons corn starch , for slurry
  • 1/4 cup cold water, for slurry

Instructions
 

  • Before you start, mix together the beef seasoning and gather your gravy ingredients.
  • Cut the meat into 1-inch cubes, removing any excess fat.
  • Combine the beef seasoning and evenly coat the meat. Sprinkle flour over it and toss again.
  • Heat 3 tablespoons of olive oil in a large skillet over medium-high heat. Brown the meat in batches, avoiding overcrowding. Sear each side for 30-45 seconds, adding more oil if needed. Transfer to a plate (don't fully cook it; it'll simmer in the gravy for flavor).
  • Add butter and garlic, cooking for 1 minute.
  • Incorporate all the remaining gravy ingredients, except the cornstarch mixture. Bring it to a boil.
  • Blend cornstarch with cold water, whisking it into the sauce gradually. Stir continuously until reaching your desired thickness.
  • Reduce the heat to medium-low, return the beef along with its juices. Simmer with the lid partially covered for 10-15 minutes until the beef is fully cooked. Remove from heat. Enjoy!
