Begin by soaking wooden skewers in water for at least 30 minutes before starting.
Mix the chicken seasoning in a small bowl and set it aside. Cut the chicken into 3" pieces, placing them in a large bowl or zip-top bag. Toss the pieces in olive oil and spices, ensuring thorough coating.
Thread the chicken tightly onto each skewer, eliminating any gaps for maximum juiciness. Trim the top of the skewers if necessary to fit into the air fryer after skewering.
Garlic Parmesan Butter Sauce:
Combine butter and garlic in a microwave-safe bowl, partially melting them. Add red pepper flakes, hot sauce, parsley, and parmesan. Whisk until well combined. If the sauce separates, add 1-2 tablespoons of softened butter and stir to re-emulsify.
Set aside 1/3 of the sauce for basting the par-cooked chicken. Save the remaining sauce for basting the cooked chicken to prevent cross-contamination. Remember to wash your basting brush in between uses.
Oven Preparation:
Preheat the oven to 450 degrees. Arrange chicken skewers on a rimmed baking sheet lined with foil, cooking for 14 minutes. Flip halfway through, basting with butter several times during baking.
Switch the oven to broil and cook an additional 2 minutes to achieve golden tops. Remove from the oven, baste one last time with butter sauce, and sprinkle with leftover parmesan.
