Baked Orange Chicken

Prepare a delicious Baked Orange Chicken using a homemade sauce inspired by Panda Express Orange Chicken, coupled with a simple baking method that's both convenient and healthier than frying, all achieved in just 30 minutes!

Ingredients
 

  • 1 cup panko breadcrumbs
  • 1 lb chicken thighs, boneless skinless
  • 2 large eggs, beaten
  • 1/2 cup flour
  • 1 tablespoon vegetable oil, divided
  • 1 1/2 tablespoons fresh ginger, minced
  • 2 teaspoons garlic, minced
  • 1/2 teaspoon crushed red pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons rice wine, white wine works too
  • orange juice, from 1 orange
  • 1 teaspoon sesame oil
  • 3 tablespoons sodium soy sauce
  • 10 tablespoons sugar
  • 10 tablespoons white vinegar
  • 1 orange, zested

Instructions
 

  • Preheat the oven to 400 degrees. Pulse panko in a food processor for finer crumbs. Set up bowls for panko, chicken chunks, eggs, and flour.
  • Coat chicken in flour, then egg, and breadcrumbs. Place on a baking sheet, spray with cooking spray, and bake for 20-25 minutes.
  • While chicken bakes, prepare the sauce. Sauté ginger, garlic, and red peppers in a saucepan. Add remaining sauce ingredients, bring to a boil until thickened.
  • Once chicken is done, toss it in the sauce and serve. Enjoy this crispy delight!
