Sautè by frequently flipping the sausage for 1 to 2 minutes until slices acquire a hint of browning. Remove from the pan and keep aside.
Lower the heat to medium. Incorporate the remaining 1 1/2 tablespoons of oil to the skillet, along with the zucchini, onion, and bell pepper.
Sprinkle the mixture with salt, oregano, basil, garlic powder, onion powder, and pepper. Give it a good stir. Allow the ingredients to cook until the onion turns translucent and the peppers and zucchini are nearing tenderness, which takes around 5 to 10 minutes.
Reintroduce the sausage back to the skillet, adding minced garlic as well. Stir everything together. Cover the skillet, ensuring that everything heats through for 1 to 2 minutes. Taste the mixture and add more salt if preferred.
